Tasting
Appearance
The wine reveals a pale yellow hue, both intense and bright.
Nose
The nose unveils a complex bouquet blending orchard fruit aromas, such as pear and green apple, with notes of citrus and white flowers. A mineral dimension emerges through subtle smoky, iodine and gunflint touches.
Palate
On the palate, the wine offers an ample, enveloping texture, perfectly balanced by a lively acidity that lends it beautiful tension. The long, vibrant finish stands out for its salinity and slightly chalky texture.
Food and wine pairings
This wine pairs ideally with seafood such as oysters or clams, as well as with meaty fish like roasted turbot or braised monkfish. It also beautifully accompanies white meats in cream and mushroom sauces, or hard cheeses such as an aged Comté.
Serving and cellaring
To fully appreciate the Pouilly-Fuissé Village "Haut de la Roche" 2025, it is recommended to serve it at around 12°C, after allowing it to breathe for an hour in the bottle or a light decanting. Boasting fine potential, this wine can be cellared for around ten years.

The estate
Founded in 1990 by Jean-Marie Guffens-Heynen, its current owner, the négociant house Verget is based in Sologny, at the heart of Burgundy. A true model of bespoke négociant, the estate stands out for its exacting approach: it purchases exclusively carefully selected grapes from partner winegrowers. Under the technical direction of Julien Desplans, Verget produces wines of great precision, thereby helping to showcase the richness and diversity of the Mâconnais terroirs through distinctive, vibrant cuvées.
The vineyard
This Pouilly-Fuissé wine comes from vines located on the upper part of the Roche de Vergisson, at more than 400 metres above sea level. This singular terroir, with its southeast exposure, lies on extremely thin, stony and highly limestone soils. The vineyard is farmed according to the principles of sustainable agriculture, and the harvest is carried out exclusively by hand in order to preserve the integrity of the berries.
Winemaking and aging
The crafting of the Pouilly-Fuissé Village "Haut de la Roche" 2025 relies on a slow, gentle pressing. Fermentations occur spontaneously thanks to indigenous yeasts. The wine then benefits from around nine months of ageing on the lees in oak barrels, a quarter of which are new, bringing density and aromatic refinement without masking the vibrancy of the fruit.
