This wine is ideal with subtly prepared fish and seafood, such as monkfish stew, trout or mussels. The estate
Founded in 1831 by Bernard Bichot in Monthélie, the Albert Bichot House settled permanently in Beaune in 1912. Managed by Albéric Bichot since 1996, representing the sixth generation, it cultivates a vineyard area of over 100 hectares, distributed across six estates in Burgundy. A pioneer of organic viticulture, certified since 2014, Albert Bichot combines centuries-old heritage with a modern and responsible approach, cultivating Pinot Noir, Chardonnay, Aligoté and Gamay, including 13 hectares of Grands Crus and 26 hectares of Premiers Crus.
The vineyard
This Viré-Clessé comes from a strict selection of plots, predominantly located on hillsides and rooted in limestone soils with white pebbles.
Winemaking and aging
The Viré-Clessé Village 2022 is produced with respect for the terroir. Alcoholic fermentation and aging on fine lees take place 80% in stainless steel vats and 20% in oak barrels over a period of 8 to 9 months. This combination of vessels preserves the freshness of the fruit while imparting a subtle aromatic complexity.
