Tasting

Color

The color displays a light to medium ruby red hue with subtle garnet highlights. Clear and bright, it reflects the typical features of the 2021 vintage, less deeply colored than previous years.

Nose

The nose reveals a complex bouquet dominated by aromas of ripe red fruits: cherry, raspberry, and wild strawberry. Delicate floral notes of rose petals accompany an earthy minerality evocative of limestone and damp undergrowth. Spicy nuances of cinnamon and clove gradually emerge, complemented by tones of wet forest and mushroom characteristic of the Burgundy terroir.

Palate

On the palate, this wine shows an elegant, well-balanced structure with a light to medium body. The attack is supple, revealing flavors of honeyed red fruits supported by a fresh, lively acidity. Soft, well-integrated tannins contribute to a silky texture. A distinct minerality reflects the limestone-and-clay terroir, enhanced by notes of fresh earth and leather. The finish lingers elegantly, leaving an impression of mineral freshness.

Food and wine pairings

This Bourgogne Pinot Noir pairs harmoniously with roasted poultry, herb-roasted free-range chicken, or white meats. It also goes beautifully with rich fish such as grilled salmon or trout. Mushroom-based dishes—especially a porcini risotto or a truffle omelet—make particularly successful pairings. This wine also matches soft cheeses such as Brie or Camembert, as well as fresh or aged goat cheeses.

Serving and cellaring

The Bourgogne Pinot Noir "Cuvée Simone" 2021 is best enjoyed at a temperature between 14 and 16°C. The estate

Founded in 1920 by Arsène and Flavie Amiot, Domaine Guy Amiot et Fils is based in Chassagne-Montrachet, in Burgundy. Handed down from generation to generation, the estate is now run by Thierry and Fabrice Amiot, representing the fourth generation of winegrowers. Héloïse Amiot, Thierry’s daughter, embodies the fifth generation and is actively involved in the life of the estate. Renowned for its commitment to an authentic expression of terroir and to sustainable viticultural practices, the estate produces a range of wines reflecting the diversity of Burgundy climats. In 2015, two special cuvées were created to honor the founding women: the "Cuvée Flavie" and the "Cuvée Simone".

The vineyard

The Bourgogne Pinot Noir "Cuvée Simone" comes from plots located partly in Remigny and at the foot of the Chassagne hillside, on the boundary between the communes of Puligny-Montrachet and Corpeau. The vineyard covers one hectare with a south-facing exposure. The soils are composed of clay and limestone, particularly well-suited to producing Bourgogne wines. The vines, forty-five years old at the time of the 2021 vintage, benefit from a nutrient-rich terroir that encourages the expression of Pinot Noir.

The vintage

The 2021 vintage in Burgundy was marked by cool weather conditions, in contrast to the warmer preceding years. The year began with severe spring frosts in April that affected yields. Humid conditions then encouraged the development of downy mildew, requiring meticulous grape sorting at harvest. Despite these challenges, producers succeeded in crafting wines of elegance and finesse, defined by naturally high acidity and refined aromatic profiles.

Vinification and aging

The Bourgogne Pinot Noir "Cuvée Simone" 2021 is vinified using traditional Burgundy methods. After a pre-fermentation cold soak of a few days, alcoholic fermentation takes place for around ten days in temperature-controlled stainless-steel tanks, with regular pump-overs and punch-downs. Natural malolactic fermentation is carried out under controlled temperature. The wine is then aged partly in French oak barrels for eighteen to twenty-four months, with a moderate proportion of new oak preserving the purity of the fruit. After around twelve months, the wine is blended in tank for an additional six months before bottling.
