The estate
Founded in 1885, Domaine Henri Boillot now spans nineteen hectares across Puligny-Montrachet and Volnay. Henri Boillot, owner since 2005, runs this family estate based in Meursault with his son Guillaume, who joined the business in 2008. The estate stands out for its commitment to ultra-reasoned viticulture, banning all chemical herbicides and favoring hand harvesting. Recognized by critic Robert Parker as one of the finest producers in the Côte d'Or, the estate produces prestigious white wines from Puligny-Montrachet and outstanding red wines from Volnay and Pommard.
The vineyard
The Volnay 1er Cru "Les Fremiets" comes from a plot located in the village of Volnay, characterized by vines at least fifty-five years old at the time of the 2014 harvest. The Climat of Frémiets benefits from an exceptional southeast-facing exposure, providing optimal sunshine and protection from northerly winds. The shallow, rocky soils rest on a clay-limestone subsoil containing iron-rich Bathonian limestone. This soil profile naturally promotes aromatic concentration and limits yields.
The vintage
The 2014 vintage in Burgundy was marked by balanced climatic conditions. The year delivered an expression of finesse with preserved natural acidity, essential qualities for length on the palate and the aging potential of a Volnay Premier Cru.
Vinification and aging
The Volnay 1er Cru "Les Fremiets" 2014 benefits from the estate’s rigorous practices: hand harvesting at optimal phenolic ripeness, meticulous grape sorting, alcoholic fermentation initiated with indigenous yeasts, and careful control of fermentation temperatures. Aging takes place in 228-liter French oak barrels for eighteen months, giving the wine subtle complexity and harmonious oak integration. Bottling is carried out without fining or filtration in order to preserve aromatic complexity.
