Tasting

Color

The wine displays a brilliant crimson-red hue, emblematic of the elegance of the 2021 vintage.

Nose

The nose opens with aromas of fresh red fruits, notably ripe cherries, raspberries, and cranberries. Delicate floral notes of violet add a refined touch, while subtle spicy hints round out the aromatic bouquet. Mineral and earthy nuances enrich the overall profile, revealing its Burgundian typicity.

Palate

On the palate, the wine is fresh and lively, driven by a crisp acidity that gives structure. Fine, silky tannins support an elegant mouthfeel without ever overshadowing the fruit. The palate reveals flavors of red berries—primarily cherry and raspberry—alongside an earthy touch and a lovely minerality that brings complexity. The body is medium, offering sufficient substance while maintaining freshness and finesse. The finish is clean, graceful, and subtly savory, with medium length and a lingering mineral impression.

Food and wine pairings

This Bourgogne Pinot Noir 2021 pairs perfectly with roast poultry and creamy white meats with mushrooms. It also matches very well with salmon and other fuller-bodied fish. An elegant, mineral Bourgogne red from the Côte de Beaune

The estate

Founded in 1835, Domaine Matrot is a family-owned estate located in the heart of Meursault, in the Côte de Beaune in Burgundy. Today, the sisters Adèle and Elsa Matrot have run the estate since 2016, representing the sixth generation of winegrowers. The estate spans around 24 hectares of vineyards across several appellations, with the majority of plots in Meursault and Puligny-Montrachet. Certified organic since 2000, Domaine Matrot practices sustainable viticulture and low-intervention winemaking, favoring indigenous yeasts and long aging to preserve the authenticity of its terroirs. The estate is recognized for the quality and precision of its wines, both white and red.

The vineyard

This Bourgogne Pinot Noir comes from carefully selected plots located on the lower slopes of Meursault and neighboring villages, notably between Meursault and Puligny-Montrachet. The vines grow on well-drained soils made up of limestone and clay, typical of the Côte de Beaune. This geological composition naturally tempers vine vigor while allowing the development of excellent fruit purity and a distinctive minerality. The plots’ exposure provides optimal conditions for balanced Pinot Noir ripening, preserving aromatic freshness while ensuring appropriate phenolic maturity.

The vintage

The 2021 vintage in Burgundy proved particularly demanding for winegrowers. Devastating frosts in April affected many vineyards, followed by conditions conducive to the development of downy mildew. Despite these climatic challenges, rigorous producers succeeded in crafting wines of remarkable character. The vintage stands out for slender, elegant reds, with lighter colors than in recent sunny years. Alcohol levels remained moderate, around 12.5 to 13%, and the wines express more red fruit than black fruit, with a fresh acidity that structures the whole. For estates committed to quality viticulture, 2021 made it possible to produce genuinely pleasurable wines—vibrant and mineral—recalling the classic vintages of yesteryear.

Vinification and aging

The grapes for the Bourgogne Pinot Noir 2021 were hand-harvested during the coolest hours of the day, between 7 and 10 a.m., in order to preserve aromatic freshness and limit oxidation. Vinification was carried out with 100% whole berries, preceded by cold soaking. Fermentations were conducted with indigenous yeasts in temperature-controlled stainless-steel tanks, allowing precise temperature management. Fermentations took place over a period of eight to ten weeks, promoting the wine’s elegance and balance. Aging was carried out in 228-liter French oak barrels for 11 to 18 months, with a limited proportion of new oak (10 to 20%) in order to preserve the expression of the fruit and the terroir. The wine then spent time in tank before bottling.
