Tasting

Color

The color displays an intense, shimmering ruby hue.

Nose

The nose reveals red fruit aromas with notes of cherry, strawberry, and tangy morello cherry. Floral hints of dried rose and rosewood mingle with nuances of blood orange and aromatic herbs. An iron-like minerality rounds out this complex bouquet.

Palate

On the palate, the wine stands out for its freshness and fine vibrancy. The texture is generous and structured by bright acidity and firm yet silky, delicate tannins. The lingering finish expresses a taut, fresh minerality with remarkable length.

Food and wine pairings

This Marsannay Village "Champs Salomon" 2017 pairs perfectly with roasted poultry such as guinea fowl with garlic croutons, or suckling pig with a soy jus. It also matches well with beef tenderloin and its beet reduction, duck breast with blackcurrant berries, grilled red meats, tournedos, or game.

Serving and cellaring

It is recommended to serve the Marsannay Village "Champs Salomon" 2017 at a temperature of 18°C. During the first five years, opening ahead of time or decanting will allow the wine to fully express itself. This wine has cellaring potential until around 2027, with time bringing greater integration to its texture.

The freshness and structure of a Bourgogne Village

The estate

Based in Gevrey-Chambertin, this Burgundy estate traces its origins back to the 1950s, when René Bouvier took over the domaine founded by his father in 1910 in Marsannay. Run since 1992 by Bernard Bouvier, this family estate oversees a 30-hectare vineyard farmed with deep respect for the environment.  This terroir comprises 23 hectares dedicated to red wines and 7 hectares to whites. 

The vineyard

Champs Salomon is a lieu-dit located in Couchey, near the Château de Marsannay. This small 0.50-hectare plot is home to 50-year-old vines. The soil is made up of Entroques limestone, which lends the wine structure, and Ostréa Acuminata marls, which bring breadth to the grapes. This terroir, with its essentially earthy character, deeply shapes the wine’s expression. The Climat of Champs Salomon is among the 14 lieux-dits of Marsannay selected for a potential application for Premier Cru classification, underscoring its status as an outstanding parcel.

Winemaking and aging

The Marsannay Village "Champs Salomon" 2017 is harvested by hand. After sorting on a table, the grapes are gravity-fed into temperature-controlled vats. An average of 50% whole clusters is included depending on the vintage. Fermentations take place with indigenous yeasts. Very few mechanical interventions are used during maceration, with infusion favored. Only the first pressings are kept during pressing. Aging lasts about 12 months in barrels, 20% of which are new, followed by 6 months in tanks. Bottling is carried out according to the lunar calendar.
