In its youth, this Provence white wine pairs perfectly with grilled fish. After a few years of cellaring, its richness and volume will allow it to elevate a citrus-infused fish stew or poultry in sauce.

Serving and cellaring

This Domaine Gavoty 2021 can be enjoyed now, but it will need around two years to acquire a more mineral and complex profile. It will evolve positively until around 2031.

A Provence white wine with exceptional aging potential

The estate

Founded in 1806 by Philémon Gavoty, the Domaine Gavoty is a Provençal vineyard located in Cabasse in the Var, passed down for more than two centuries through seven generations of the family. Since 1985, Roselyne Gavoty-Bonnet has run the estate alongside her husband Hervé and their children. The estate now spans 110 hectares, including 50 hectares of vines and 100 hectares of woodland. Certified organic since 2020, Domaine Gavoty stands out for its philosophy centered on texture and gastronomy, with a focus on France’s finest restaurants.

The vineyard

The Domaine Gavoty vineyard is rooted in clay-limestone soils that are particularly well suited to growing rolle, the estate’s emblematic white grape variety. Located in the northwest of the Côtes de Provence appellation, the estate occupies a historic site established on the ancient Roman Via Aurelia. The property is crossed by the Issole River and sheltered by a forest environment of oaks and pines that creates a variety of microclimates. The 50 hectares of vines are cultivated under certified organic farming.

The vintage

The 2021 vintage is the earliest in Domaine Gavoty’s history. The year was marked by low rainfall of 627 millimeters and a hot, dry summer, tempered by cool nights that allowed for slow, gradual grape ripening. Timely, highly localized rains fell at three key moments: late June, mid-August, and late August. These particular climatic conditions produced grapes of remarkable concentration and definition.

Winemaking and aging

The Domaine Gavoty 2021 grapes are harvested at optimal ripeness, destemmed and crushed, then gently pressed without maceration. Fermentation is carried out with indigenous yeasts in temperature-controlled stainless steel tanks, not exceeding 16 °C, for three to four weeks. The wine is then kept on its lees until mid-December with regular stirring. Aging continues in tank, allowing the terroir to express itself without any oak influence.
