Tasting
Appearance
The color reveals a deep red hue with ruby highlights.
Nose
The nose opens on a complex bouquet of red fruits, notably raspberry, accompanied by black fruits and spicy notes. Subtle nuances also evoke licorice.
Palate
On the palate, the wine reveals a fine, balanced tannic structure. The texture is powerful and persistent, with an elegant finish that needs a few years to reach its full expression.
Food and wine pairings
This red wine pairs perfectly with grilled red meats and structured regional dishes from Provence.
Serving and cellaring
This Grand Classique 2021 can be enjoyed now but will gain in complexity and roundness with two to three years of cellaring. Its aging potential extends to around 2031.
A structured, mineral red wine from Côtes de Provence
The estate
Founded in 1806 by Philémon Gavoty, Domaine Gavoty has carried on for more than two centuries a family winemaking tradition in the village of Cabasse, in Côtes de Provence. Now run by Roselyne Gavoty, the estate covers 50 hectares of vines surrounded by woodland. Certified organic since 2020, the estate stands out for its commitment to wines of texture and depth, rejecting the commercial simplification of Provençal rosés. The family’s cultural legacy, notably through Bernard Gavoty, a renowned music critic and organist, gives the estate a unique artistic dimension reflected in the names of its cuvées.
The vineyard
The Domaine Gavoty vineyard enjoys an exceptional setting in the commune of Cabasse, northwest of the Côtes de Provence appellation. The vines are planted on an ancient Triassic plateau made up of clay-limestone soils rich in minerals. This distinctive geology encourages deep root systems. The climate is characterized by high summer temperatures and harsh winters, with day-night temperature swings that can reach 18°C in summer. These conditions slow ripening and give the wines their characteristic minerality and freshness. The surrounding oak and pine forests protect the vineyard from the mistral and promote biodiversity.
The vintage
The 2021 vintage in Provence saw nearly normal rainfall over the year. An unusually mild winter was followed by a late frost episode on April 7, with temperatures dropping to -7.8°C. The summer proved hot and dry, but with cool nighttime temperatures that allowed for slow, gradual ripening of the grapes. Rainfall of around 97 millimeters after September 20 accelerated grape maturity without compromising their health.
Vinification and aging
Fermentations are carried out with indigenous yeasts, thus preserving the authentic expression of the terroir.
