The estate
An iconic estate of the Chablis appellation, in Burgundy, Domaine Laroche draws its roots from a remarkable heritage dating back to the 9th century. Part of the Advini group since 2009, the estate pursues a quest for excellence, producing wines praised for their finesse, elegance and aromatic intensity, true ambassadors of the nuances specific to the Chablis terroir.

The vineyard
The Saint-Martin cuvée is born from a demanding selection of plots planted on Kimmeridgian soils, renowned for their richness in minerals and marine fossils. This unique terroir gives the wine an assertive minerality and an aromatic depth that faithfully convey the identity of this white wine from Burgundy.

Vinification and ageing
The grapes are hand-harvested, then carefully sorted upon arrival at the cellar. Pressing, carried out at low pressure, is accompanied by a rigorous separation of the juices, ensuring a qualitative selection of the press juices. Alcoholic and malolactic fermentations take place in stainless steel tanks (85%) and in French oak casks (15%), in order to preserve the wine's freshness while bringing complexity.
