Tasting
Colour
The colour reveals a pale yellow hue with subtle greenish highlights, displaying beautiful brightness and great clarity.
Nose
The nose reveals an expressive bouquet of citrus and white flowers, complemented by white fruit aromas. Delicate mineral notes intertwine with subtle brioche touches.
Palate
The attack is lively, carried by a beautiful crisp acidity. The palate unfolds flavours of citrus and stone fruit, supported by a pronounced minerality with flinty accents and a touch of salinity. The finish is long, fresh and intensely mineral.
Food and wine pairing
This white wine pairs wonderfully with oysters, seafood or delicate fish. It also goes very well with scallops, langoustines or vegetable-based dishes such as asparagus.
Service and storage
For optimal tasting, it is recommended to serve this wine at a temperature between 9 and 10°C. It can be enjoyed now for its freshness, while also possessing a structure that will allow it to evolve favourably in the cellar for a few years.
The authentic and mineral expression of a Chablis terroir
The estate
Founded in 1955 by Jean Dauvissat in the village of Milly, the estate now spans 22 hectares in the heart of the Burgundy region in France. Since 2009, Fabien Dauvissat has been at the head of the family estate. Under his leadership, the estate has undergone a major transition towards organic farming and biodynamics, favouring an environmentally respectful approach. Considered a rising star of its appellation, the producer stands out for his commitment to revealing the identity of each plot through precise, minimally interventionist wines.
The vineyard
The cuvée comes from the "Les Tierces" plot, covering 0.90 hectares, located in the commune of La Chapelle Vaupelteigne within the Chablis appellation. This hillside benefits from a due-east exposure and rests on limestone marl soils typical of the Kimmeridgian. The vines, cultivated according to organic and biodynamic principles with the help of horse ploughing, have three distinct ages: 20, 34 and 59 years, bringing beautiful diversity to the grapes.
The vintage
The year 2023 offered very favourable climatic conditions, allowing the fruit to reach optimal ripeness. The growing cycle resulted in a generous harvest, producing berries with a beautiful balance between fruity ripeness and the preservation of an acidity characteristic of the region.
Winemaking and aging
The grapes are harvested at optimal ripeness and then rigorously sorted. Fermentation takes place plot by plot in stainless steel tanks, using exclusively indigenous yeasts. The wine is then aged on the lees for 18 to 24 months in these same tanks, with very light filtration before bottling in order to preserve the wine's full quality and authenticity.
