Description
Characteristics and tasting tips for the Meursault Premier Cru "Les Charmes" Domaine du Pavillon 2023 from Albert Bichot
Tasting
Color
The color shows a brilliant golden hue, characteristic of the great white wines of Burgundy.
Nase
The bouquet reveals a beautiful aromatic complexity with notes of candied lemon and almonds, accompanied by delicate scents of white flowers. Spicy nuances and notes of fresh bread enrich the whole.
Palate
On the palate, it is complex, full and enveloping, offering a generous texture. A slight mineral tension brings freshness and structures the whole, creating a perfect balance. The finish is long and delicious, marked by accents of brioche and spices.
Food and wine pairings
This Meursault Premier Cru pairs ideally with fine fish and finely prepared shellfish. It also goes wonderfully with roasted poultry or poultry in cream sauce and white meats. The perfect combination: seared scallops with a saffron sauce.
Service and storage
This Meursault Premier Cru "Les Charmes" 2023 should be tasted at a temperature between 12 and 14°C. It can be enjoyed young on the fruit or kept in the cellar until around 2030.

The estate
Founded in 1831 by Bernard Bichot in Monthélie, the Albert Bichot House upholds a family tradition dating back to 1214. Managed by Albéric Bichot, the sixth generation, since 1996, the House cultivates more than 100 hectares spread across six estates in Burgundy. Certified organic since 2014, Albert Bichot offers the region's most extensive portfolio of organic wines, combining centuries-old tradition with pioneering environmental commitment.
The vineyard
The Meursault Premier Cru "Les Charmes" comes from the Domaine du Pavillon and covers 1.17 hectares with 35 to 42-year-old vines. The Les Charmes locality consists of two distinct plots: Charmes-Dessous with more clay-rich soils that impart opulence and generosity, and Charmes-Dessus, which is more limestone-rich, lending the wine airiness, minerality and precision. The clay-limestone soils form the ideal terroir for the expression of Chardonnay.
Winemaking and ageing
The harvest is carried out manually with careful sorting of the grapes. Slow pressing with moderate pressure precedes alcoholic fermentation. Ageing takes place over a period of 14 to 16 months on fine lees in oak barrels, 30 to 35% of which are new. This method allows for the development of aromatic complexity while preserving the freshness of the Meursault Premier Cru "Les Charmes" 2023.
Grape variety
This Burgundy wine is 100% Chardonnay.
