A rich and silky Meursault
The estate
Founded in 1831 by Bernard Bichot in Monthélie, the Albert Bichot House settled permanently in Beaune in 1912. Under the direction of Albéric Bichot, representing the sixth generation of the family since 1996, it manages a wine heritage of over 100 hectares, spread across six estates in Burgundy. A pioneer in organic viticulture certified since 2014, Albert Bichot combines centuries-old tradition with responsible modernity, cultivating Pinot Noir, Chardonnay, Aligoté, and Gamay across 13 hectares of Grands Crus and 26 hectares of Premiers Crus.
The vineyard
This Meursault comes from 1.35 hectares of vines with an average age of 35 to 40 years, planted on clay-limestone soils with white marl. This cuvée is the result of the blend of three plots with complementary characteristics, expressing all the richness of the appellation.
Winemaking and Aging
The grapes for the Meursault Village Domaine du Pavillon 2023 are harvested by hand and then carefully sorted. After a slow pressing with moderate pressure to respect the fruit, alcoholic fermentation takes place in oak barrels. Aging takes place on fine lees in oak barrels, 20 to 30% of which are new, over a period of 14 to 16 months.
