The estate
Founded in 1831 by Bernard Bichot in Monthélie, the Albert Bichot house settled permanently in Beaune in 1912. Managed by Albéric Bichot since 1996, representing the sixth generation of the family, it cultivates over 100 hectares, spread across six Burgundian estates, including Domaine du Pavillon in Pommard, which covers 17 hectares. Certified organic since 2014, the house stands out for its commitment to heritage as a Grand Mécène Fondateur of the Cité des Climats et des Vins de Bourgogne.
The vineyard
Clos des Ursulines is a 3.76-hectare monopole located at the southern limit of Pommard, towards Volnay, in the immediate vicinity of the village center. This peaceful Clos, bordered by century-old pine trees, was once the property of the sisters of the Ursuline convent. The vines, averaging 35 to 40 years old, thrive on clay-limestone soils with white marl, giving the wine an elegant style that contradicts the traditional image of a Pommard considered masculine.
Winemaking and aging
Harvesting is carried out manually with strict sorting upon arrival at the winery. The Pommard Village "Clos des Ursulines" Monopole Dom. du Pavillon 2023 benefits from vatting for 18 to 21 days in temperature-controlled wooden vats, followed by aging for 14 to 16 months in oak barrels, 20 to 30% of which are new.
