The estate
Founded in 1731 by Michel Bouchard in Beaune, the House of Bouchard Père & Fils is one of the most prestigious institutions in Burgundy. Owned by Artémis Domaines and François Pinault since 2022, it farms around 100 hectares across 77 climats of the Côte de Beaune, including legendary Grands Crus such as Montrachet and Chevalier-Montrachet. In 2025, the estate obtained full organic certification and undertook a major restructuring with the creation of Domaine des Cabottes. Led by Frédéric Engerer and Emmanuel Dumont, the estate is moving away from its négociant business to focus exclusively on its vineyards, while preserving its historic heritage at the Château de Beaune.
The vineyard
The climat Les Avaux is one of the most renowned Premier Crus in the Beaune appellation. Situated at an altitude between 230 and 250 meters, this terroir benefits from marl-rich clay-limestone soils that are particularly well suited to expressing pinot noir. This geological composition gives the wines remarkable depth, a refined structure and outstanding aging potential.
The vintage
The 2019 vintage in Burgundy stands out for its exceptional character. The year was marked by a chronic lack of rainfall and warm, dry conditions throughout the growing season. These climatic circumstances allowed the grapes to reach optimal ripeness, producing wines that are both concentrated and elegant. Red wines from the Côte de Beaune reveal very pleasant floral and fruity aromas, with notes of violet, elderflower, blackberry, blueberry and blackcurrant. They are characterized by a texture that is both supple and concentrated, splendid, accompanied by aromas of dried fruit, spices and licorice.
Vinification and aging
The grapes for the Beaune 1er cru "Les Avaux" 2019 are systematically hand-harvested and transported in small crates to prevent the bunches from being crushed. Meticulous sorting of each berry is carried out before vinification. The wine then undergoes aging in oak barrels, allowing it to develop complexity while preserving the expression of the terroir.
