Tasting
Color
The wine displays a deep, intense red color.
Nose
The bouquet opens intensely with aromas of black elderberry, crushed strawberries and blackberries, underscored by a hint of cassis liqueur. With aeration, the nose develops toward spicy notes and licorice.
Palate
The attack reveals a broad, full and refined palate. The aromatic intensity unfolds with character, supported by a very supple structure. The finish stands out for its remarkable length.
Food and wine pairing
This wine pairs ideally with a porcini bouchée, a truffle omelet or a Tournedos Rossini.
Serving and cellaring
N°3 de Castelmaure 2022 is best enjoyed at 16°C. It is recommended to decant it 4 hours before serving. This wine is ready to drink now and has cellaring potential until around 2032.
An intense and generous red Corbières from the Languedoc
The estate
Founded in 1921 in the heart of the Corbières appellation in the Languedoc, the Cave de Castelmaure now brings together 54 winegrowers who farm 450 hectares of vines. This century-old cooperative stands out for its exclusively hand harvesting and its mastery of carbonic maceration. It preserves an exceptional conservatory of 218 clones and has benefited since 1985 from a partnership with the Jeanjean house.
The vineyard
The vines for this cuvée thrive on schist and limestone soils typical of the Corbières appellation.
Winemaking and aging
After hand harvesting, N°3 de Castelmaure 2022 is vinified using different techniques depending on the grape variety. The Syrah is vinified as whole clusters with a cold maceration prior to fermentation, followed by carbonic maceration at low temperature to highlight the fruity aromas. The Grenache benefits from traditional maceration. This wine from the Languedoc is aged for 12 months in French oak barrels, 25% of which are new.
