The estate
The Domaine Berthet-Bondet was founded in 1984 by Jean and Chantal Berthet-Bondet, two agronomists who left city life behind to revive an abandoned vineyard. Today, it spans 15 hectares in Château-Chalon in the Jura. Since 2018, Hélène Berthet-Bondet has carried on the family legacy and runs the estate. What sets Domaine Berthet-Bondet apart is its scientific, methodical approach to Jura winegrowing, combining agronomic expertise with respect for local traditions—particularly in the production of wines aged under a veil of yeast.
The vineyard
The vines for this Côtes du Jura grow on soils typical of the Jura, made up of gravel and marl. With an average age of around 30 years, they have been farmed under certified organic practices since 2013. The estate practices cover cropping every other row as well as soil cultivation.
Vinification and aging
The harvest is carried out by hand. The grapes are pressed as whole clusters before fermentation takes place in stainless steel tanks. The Savagnin then ages for at least three years in old 228-liter oak barrels, following the traditional Jura-method under a veil of yeast. The barrels are not topped up, allowing controlled oxidation that gives the wine its distinctive character.
