Tasting

Color
The color reveals a golden-yellow hue with amber highlights, typical of Vin Jaune wines from the Jura.

Nose

Palate
On the palate, this wine shows a powerful, concentrated structure and a beautiful, lingering finish, marked by flavors of dried fruits and spices. The finish expresses remarkable freshness.

The estate

Founded in 1984 by Chantal and Jean Berthet-Bondet, agricultural engineers based in Château-Chalon, the Domaine Berthet-Bondet Jura brought in its first harvest in 1985. The vineyard covers 15 hectares, divided into 4.5 hectares in AOC Château-Chalon and 10.5 hectares in AOC Côtes du Jura. Since 2018, Hélène Berthet-Bondet has continued the family legacy. Organic certified since 2013, the estate grows all Jura grape varieties and produces the full range of Jura wines.

The vineyard

This Château-Chalon comes from Savagnin vines with an average age of 35 years, planted on gray Lias marls. This Jura vineyard is farmed organically, with cover crops in every other row and mechanical soil cultivation.

Vinification and aging

The harvest is carried out by hand. The grapes are pressed as whole clusters before fermentation takes place in stainless steel tanks. The Château-Chalon Vin Jaune 2017 then ages for at least 6 years in old 228-liter oak barrels under a flor (veil of yeast). The barrels are not topped up, allowing the distinctive oxidative character of Vin Jaune to develop.
