Tasting

Color
The color reveals a deep ruby hue enhanced by subtle purple highlights, reflecting the wine’s remarkable concentration.

Nose
The bouquet shows fine aromatic complexity dominated by intense notes of black cherry and raspberry. Nuances of sweet spices and forest floor enrich the aromatic range, alongside discreet touches of vanilla. Though still tight in its youth, the nose reveals exceptional fruit depth and very promising complexity.

Palate
On the palate, the structure is monumental, with present yet elegant, perfectly polished tannins. The balance between generous fruit and well-controlled acidity gives the wine remarkable harmony. The dry finish lingers with impressive length, allowing the aromas to evolve endlessly.

Food and wine pairings

This grand cru is an ideal match for fine red meats such as furred game in sauce or beef bourguignon. It also pairs beautifully with a roasted rib of beef, coq au vin, or characterful washed-rind cheeses.

Serving and cellaring

The Mazy-Chambertin Grand Cru 2021 is best enjoyed at a temperature between 15 and 16°C. This wine should reach its peak between around 2026 and 2041, offering outstanding aging potential.

Burgundian power and finesse in a Gevrey-Chambertin grand cru

The estate

Domaine Henri Rebourseau traces its origins back to 1782, when Claude Rebourseau settled at La Roche Vanneau. Established in Gevrey-Chambertin in Burgundy, this family estate now spans 13.5 hectares, nearly half of which are in prestigious grands crus. Since 2018, the property has belonged to the Bouygues family, who entrusted technical management to Jean de Surrel and his sons, Bénigne and Louis de Surrel. The estate stands out for its pioneering commitment to certified organic farming since 2006 and biodynamics since 2008, as well as for its philosophy of extended aging.

The vineyard

Mazis-Chambertin stretches across an outstanding terroir located north of Chambertin-Clos de Bèze, in the Côte de Nuits. The vines benefit from an east-facing exposure and grow on marl-limestone soils enriched with Jurassic geological formations. The altitude, between 240 and 280 meters, encourages slow, gradual ripening of Pinot Noir. Old vines, with an average age of up to 60 years, produce deliberately limited yields of 20 to 30 hectoliters per hectare, ensuring remarkable aromatic concentration.

The vintage

The 2021 vintage in Burgundy proved complex and contrasting. Winter was marked by an exceptionally severe frost episode that impacted the entire French vineyard. Flowering took place at the end of May in milder conditions, followed by particularly rainy months in June and July. Weather instability was observed from mid-July to mid-August. Despite these climatic challenges, rigorous winegrowers such as Domaine Henri Rebourseau succeeded in producing wines of very high quality.

Vinification and aging

Vinification of the Mazy-Chambertin Grand Cru 2021 is carried out parcel by parcel with indigenous yeasts in temperature-controlled stainless-steel tanks. Punch-downs are performed by hand, and total maceration lasts 22 to 25 days depending on the parcel. After the first run-off, the wine is racked into barrels for malolactic fermentation. Aging then continues for 18 months in barrels, followed by several years of refinement in the cellar before release, in keeping with the estate’s philosophy of extended maturation.
