Tasting

Color

The wine displays a pale golden-yellow hue, luminous and bright.

Nose

The nose reveals aromas of lemon and grapefruit, accompanied by delicate floral notes. With aeration, the bouquet evolves toward fragrances of white peach, fresh almond, quince and crystallized ginger, with subtle touches of toasted almond.

Palate

On the palate, this wine charms with its remarkable balance between vibrant acidity and a generous texture. Citrus flavors—especially lemon zest and grapefruit—intertwine with notes of white peach and apricot. Saline, iodine-tinged minerality brings tension and freshness, while delicate buttery nuances enrich the mid-palate. The impressively long finish lingers on persistent saline notes.

Food and wine pairings

This Saint-Aubin 1er Cru pairs perfectly with seafood and shellfish, notably oysters, lobster or langoustines. It also matches well with firm-fleshed fish such as turbot or sole, served with a butter sauce. Roasted white poultry and mushroom-based dishes also make excellent pairings.

Serving and cellaring

The Saint-Aubin 1er Cru "Clos de la Chatenière" 2019 is ideally enjoyed at a temperature of 11-12°C. About one hour of aeration in a decanter allows the wine to fully reveal its aromatic complexity. This wine can be enjoyed until around 2035, or even beyond under optimal cellaring conditions.

A Saint-Aubin premier cru with dazzling minerality and great complexity

The estate

The Domaine Hubert Lamy was founded in 1973 by Hubert Lamy. Located in the heart of Burgundy, this family estate is historically rooted in the village of Saint-Aubin. Since 1995, his son Olivier Lamy has been running the estate alongside his wife, Karine Lamy-Tollot. Today, the domaine spans 18.5 hectares across around twenty appellations in the Côte de Beaune, including parcels in Puligny-Montrachet, Chassagne-Montrachet and Santenay. Recognized as one of the appellation’s leading ambassadors, the domaine practices sustainable, environmentally respectful viticulture.

The vineyard

The Saint-Aubin 1er Cru "Clos de la Chatenière" comes from a 1.25-hectare parcel planted in 1964, whose vines—around 55 years old in 2019—bring concentration and complexity. Set on a steep hillside facing south-southwest, this parcel benefits from a cool north-northeast exposure that delays ripening by one to two weeks compared with more southerly sites. The exceptionally stony clay-limestone soils lie over a hard limestone bedrock, promoting optimal drainage and forcing roots to dive deep. This high-altitude setting gives the wine its hallmark freshness and pronounced minerality.

The vintage

The 2019 vintage was marked by a warm, sunny year, with an April frost episode that reduced yields. Particularly favorable summer conditions allowed optimal ripening of the grapes while preserving natural acidity thanks to Clos de la Chatenière’s cool exposure. This combination gave rise to balanced wines that unite ripe fruit with mineral tension.

Winemaking and aging

The grapes are harvested by hand and then gently pressed through extended pneumatic pressing. After light settling that preserves the fine lees, the must is transferred to 600-liter demi-muids that are one to five years old. Alcoholic fermentation proceeds slowly at low temperature for about 90 days, followed by malolactic fermentation in the same vessels. Aging on the lees lasts 12 to 18 months with minimal lees stirring, before a period in stainless-steel tank for finishing. The use of new oak is under 2%, thereby preserving the pure expression of the terroir.
