Nose

Palate
On the palate, the wine offers a creamy texture and lovely concentration. The palate expresses flavors of white-fleshed fruits and citrus, supported by a very pronounced saline minerality. The balance between textural richness and mineral freshness defines this wine. The Estate

The Domaine Hubert Lamy was founded in 1973 by Hubert Lamy in the commune of Saint-Aubin, in Burgundy. Since 1995, Olivier Lamy has run the estate alongside his wife Karine, from the Tollot-Beaut family. The vineyard now spans 18.5 hectares spread across Saint-Aubin, Puligny-Montrachet, Chassagne-Montrachet, and Santenay. Olivier Lamy has established himself as a benchmark for the Saint-Aubin appellation thanks to his high-precision viticulture, notably through very high-density plantings, and his minimalist approach in the cellar that favors the authentic expression of terroirs.

The Vineyard

The Climat "En Remilly" is among the most prestigious premier crus of Saint-Aubin. Located just above the Grand Cru Chevalier-Montrachet, this vineyard benefits from an ideal south/southeast exposure. The estate owns 2.02 hectares within this Climat, divided into two distinct parcels. The soils are characterized by their limestone and stony nature, with a high proportion of pure limestone on the upper part of the slope. The vines were planted in 1989, giving them optimal maturity to produce high-quality grapes.

The Vintage

The 2018 vintage in Burgundy is considered exceptional for white wines. After a mild winter and a frost-free spring, the summer proved particularly hot and dry, with 30% more sunshine than normal. This exceptional brightness encouraged slow, gradual ripening of the grapes. Veraison extended over six weeks, allowing the development of great aromatic complexity. Harvest began very early, on August 22, with grapes in perfect sanitary condition. The climatic conditions made it possible to achieve concentration and ripeness while preserving freshness and mineral precision.

Winemaking and Aging

The grapes for the Saint-Aubin 1er Cru "En Remilly" 2018 are harvested by hand and then carefully sorted. After gentle pneumatic pressing, the juices are transferred to barrels for minimal settling in order to retain the fine lees. Alcoholic fermentation takes place in barrels with indigenous yeasts, in a cool environment allowing for a long fermentation of around ninety days. The estate mainly uses large-format barrels of 350 and 600 liters, mostly one- to five-year-old barrels, with only 10 to 15% new oak. After malolactic fermentation in barrel, the wine is aged on its lees for around eighteen months with regular stirring, then refined for an additional six months in stainless steel tank before bottling.
