Appearance

Nose
The bouquet reveals remarkable complexity, unveiling aromas of stone fruit alongside notes of fresh bread and dried white flowers. Hints of wet stones add a mineral dimension, while discreet reductive notes point to extended ageing.
Palate
On the palate, this wine offers a medium to generous structure, precisely sculpted. Its ever-present minerality faithfully reflects the limestone and stony terroir of the climat. Bright, taut acidity—perfectly ripe and integrated—creates a dynamic tension characteristic of great Burgundian chardonnays. The palate reveals deep concentration and extends into a persistent saline finish, in a remarkable balance between substance and freshness.
Food and wine pairings
This Saint-Aubin 1er cru pairs beautifully with firm-fleshed fish such as turbot, sea bass or halibut, simply grilled or pan-seared. Shellfish like scallops, lobster or langoustines also make excellent matches. Delicately prepared white poultry, as well as fish in a light creamy sauce, harmonize perfectly with this wine. It can also be enjoyed as an aperitif, on its own or with refined canapés.
Serving and cellaring
The Saint-Aubin 1er cru "En Remilly" 2019 is ideally served between 12 and 14°C. This wine can be enjoyed until around 2050, its bright acidity and structuring minerality giving it exceptional ageing potential. Significant aeration is recommended in its youth to allow the initial reductive notes to dissipate.

The estate
Created in 1973 by Hubert Lamy, the Domaine Hubert Lamy follows a family line that has cultivated vines in Saint-Aubin since 1640. Today, the estate spans 18.5 hectares and is run by Olivier Lamy, who joined in 1995, and his wife Karine since 2005. Olivier Lamy has established himself as one of the most eloquent ambassadors of Saint-Aubin’s terroirs, leading pioneering experiments with ultra-high-density plantings reaching up to 30,000 vines per hectare. The estate exports its wines to more than 33 countries and enjoys consistent critical recognition, with a 3 BD rating from Bettane & Desseauve.
The vineyard
The climat En Remilly is a small, prestigious premier cru located southeast of the hamlet of Gamay in Saint-Aubin, directly bordering Puligny-Montrachet and Chassagne-Montrachet. Benefiting from a south to southwest exposure between 260 and 320 meters above sea level, this terroir is characterized by shallow, stony soils composed of limestone, with a depth varying between 20 and 40 centimeters depending on the position on the slope. This immediate proximity to the Grand Cru Chevalier-Montrachet gives the terroir a remarkably similar geology and exposure. Domaine Hubert Lamy farms around 2 hectares in En Remilly, split into two plots planted in 1989.
Winemaking and ageing
For the Saint-Aubin 1er cru "En Remilly" 2019, the grapes are immediately pressed using a pneumatic press, then the juice is clarified overnight before being transferred to barrels. Fermentation takes place in a separate cellar at a lower temperature over approximately 90 days to build greater aromatic complexity. Ageing lasts 24 months on lees in large-format barrels (350 and 600 liters) that are one to five years old, in order to reduce the influence of oak and preserve the wine’s freshness, followed by an additional 6 months in stainless steel tanks.
