Tasting

Appearance

The wine displays a pale to medium ruby-red color, bright and clear.

Nose

The nose reveals aromas of cherry and raspberry, accompanied by floral notes of rose. Mineral nuances and sweet spices round out this elegant, delicate bouquet.

Palate

On the palate, the wine offers immediate appeal, with cherry and raspberry fruit leading the attack. The texture is supple and velvety, carried by silky, well-integrated tannins. A mineral, herbal dimension adds complexity, while vibrant, balanced acidity provides structure. The finish shows fine length, with mineral persistence and delicate complexity.

Food and wine pairings

This red Chassagne-Montrachet pairs perfectly with herb-roasted poultry, duck, or goose. It also elegantly complements feathered game birds, moderately prepared beef, or lamb with Mediterranean herbs. Mushroom-based dishes and medium-intensity charcuterie also make excellent matches.

The estate

The Domaine Ramonet, founded in 1930 by Pierre Ramonet, stands as one of the Côte de Beaune’s benchmark estates in Burgundy. Now led by Jean-Claude Ramonet, with the support of his daughters Anne-France and Clarisse who represent the fourth generation, the estate farms seventeen hectares of vines across the region’s most prestigious terroirs. Based in Chassagne-Montrachet, the property is internationally renowned for its outstanding white wines from grands crus such as Le Montrachet, Bâtard-Montrachet, and Chevalier-Montrachet. It also produces remarkable red Pinot Noirs that are gaining increasing recognition. The estate’s philosophy favors absolute quality over quantity, in keeping with traditional methods handed down for nearly a century.

The vineyard

Clos de la Boudriotte is a premier cru located south of the village of Chassagne-Montrachet, on a south to south-southeast-facing slope. The estate owns around 1.02 hectares here. The soils are composed of marls enriched with iron oxide, calcareous gravel, and mixed clay. This varied mineral composition, with the presence of white marls and limestone, makes it possible to produce Pinot Noirs that are both powerful and elegant, with fine tension and a focused structure. The terroir gives the wines an expression that sits midway between muscular power and the finesse of higher-altitude premier crus.

The vintage

The 2021 vintage in Burgundy proved particularly challenging. Devastating frosts in April damaged the emerging buds, significantly reducing potential yields. Persistent downy mildew then affected the surviving fruit, requiring meticulous sorting at harvest. Despite these challenges, the year’s cool conditions helped preserve the wines’ elegance and freshness. The 2021 reds are characterized by a paler color than recent vintages, moderate alcohol levels, and a delicate aromatic profile that favors finesse over concentration. This so-called “retro” vintage recalls the classic styles of the past, with streamlined structures and delicate red fruits supported by peppery and mineral notes.

Winemaking and aging

The grapes for the Chassagne-Montrachet 1er cru "Clos De La Boudriotte" 2021 are fully destemmed, then placed in concrete vats for spontaneous fermentation with indigenous yeasts. The estate employs cool fermentation temperatures, lowered by around two degrees Celsius, in order to preserve aromatic finesse and the fruit’s delicate character. Aging takes place in French oak barrels with a moderate proportion of new oak, generally between 30 and 40% for red premier crus. This measured approach to new oak allows the Pinot Noir and the terroir to express themselves fully. The estate practices neither fining nor filtration, thereby preserving the wine’s natural textural qualities.
