    Tasting

    Colour

    The palate seduces with a full and concentrated structure. The minerality, emblematic of Chablis, unfolds here with elegance and leads to a silky, long finish of great aromatic intensity.

    Food and wine pairing

    This Chablis Grand Cru pairs perfectly with noble fish and fine shellfish such as lobster and spiny lobster. It also successfully accompanies poultry and white meats, roasted or served in sauce. The estate particularly suggests a sea bream fillet in vanilla butter.

    The Chablis Grand Cru "Bougros" Domaine Long-Depaquit 2023 reveals its full potential between 12 and 14°C. It can be enjoyed young or cellared until around 2033 or longer.

    A fresh Chablis Grand Cru with beautiful structure

    The estate

    Founded in Monthélie in 1831 by Bernard Bichot, the Albert Bichot house bears witness to nearly two centuries of Burgundian excellence. Under the direction of Albéric Bichot, it brings together six estates spread across Burgundy, covering more than 100 hectares, including 13 hectares of Grand Crus and 26 hectares of Premier Crus. The Beaune-based house stands out for its pioneering role in the conversion to organic farming in the Côte d'Or and offers the most extensive portfolio of organic wines among the Beaune houses.

    The vineyard

    Bougros, located at the western end of the Chablis Grand Crus, benefits from an exceptional terroir of deep clay-limestone soils resting on Kimmeridgian marl. The 0.50-hectare plot, richer in clay than the other Grand Crus, ensures excellent water supply. The vines, which are 60 years old on average, are planted at 8,000 vines per hectare, encouraging root competition and deep rooting. The south-west exposure guarantees strong sunlight in the afternoon.

    Winemaking and aging

    The grapes are harvested by hand and carefully sorted. Slow and gentle pressing with moderate pressure precedes alcoholic fermentation. The Chablis Grand Cru "Bougros" Domaine Long-Depaquit 2020 is aged for 10 months on fine lees in oak barrels (used for 3 to 5 wines) and then benefits from an additional 6 months of aging in stainless steel vats.

    Grape variety

    This Grand Cru from Burgundy is produced exclusively from Chardonnay.
