    Tasting

    Color
    The color reveals a bright golden hue, enhanced by subtle pale green reflections.


    Nose
    Intense and aromatic, the nose reveals a beautiful complexity combining fresh green aromas, anise and liquorice, complemented by indulgent notes of honey, brioche and citrus.

    Palate
    The palate seduces with its breadth and aromatic richness: lime, muscat and vanilla unfold generously. The finish, marked by spicy accents, evolves towards mineral, toasty and slightly buttery touches, a testament to expert maturation and great potential for further development.

    Food and wine pairings
    This great Sancerre white wine pairs beautifully with refined crustaceans such as crayfish, pan-seared scallops, an andouillette enlivened with old-style mustard, or a red fruit sabayon.

    Service and cellaring
    Serve at around 12 °C after a slight aeration. This wine can be enjoyed now or cellared until around 2034.

    The precision and balance of a Sancerre white wine from old vines

    The estate
    Founded in the early 19th century by Alphonse Mellot in Sancerre, the eponymous estate embodies the heritage of a family rooted for centuries in the Loire Valley vineyards. Passed down through generations, the family estate now cultivates over 30 contiguous hectares with a steadfast commitment to quality.

    The vineyard
    The cuvée Edmond is born in the heart of a prestigious 7-hectare terroir planted with the estate’s oldest vines. Situated on Kimmeridgian marl soils, typical of Sancerre, these old vines yield a distinctive, concentrated and expressive wine, true to its original terroir.

    Vinification and aging
    The grapes are hand-harvested, then meticulously sorted before gentle pressing. The wine is then aged for eleven months in wooden vessels, including new demi-muids. A further maturation in bulk for at least twelve months completes the balance and complexity of the wine, before bottling timed with lunar cycles.
