Tasting
Nose
The aromatic bouquet reveals lovely complexity with notes of dried fruit and nuts, particularly walnut. Spicy aromas emerge, reminiscent of saffron and curry, accompanied by nuances of biscuit and mushroom.
Palate
On the palate, the wine is dry and chalky, carried by remarkable liveliness. The mineral structure lends depth and character to the whole, in an oxidative style typical of the Jura.
Food and wine pairing
This Tradition 2021 pairs ideally with smoked fish such as haddock. It also harmonizes beautifully with parsley-based preparations such as snails or frog legs. White meat served with a cream and morel sauce is an excellent match. Its spicy aromatic profile makes it the perfect companion for dishes enhanced with curry. Finally, it elevates Jura cheeses, particularly Comté.
Serving and cellaring
The Tradition 2021 is served at a temperature of 14°C. This wine has exceptional aging potential and can keep until around 2051. Its peak is around 2025.

The estate
Founded in 1984 in Château-Chalon in the Jura by Jean and Chantal Berthet-Bondet, agricultural engineers, the estate was born from the desire to revive a neglected vineyard. Since 2018, their daughter Hélène has carried on the family legacy at the head of this 15-hectare, organically certified property. The Domaine Berthet-Bondet offers a full range of Jura wines, including white, red and rosé wines, sparkling wines as well as Macvin du Jura, combining modern entrepreneurial spirit with time-honored know-how, particularly in the art of oxidative aging under flor yeast.
The vineyard
The vines for this Tradition cuvée are planted on gravel and marl soils, a typical terroir of the Côtes du Jura. With an average age of 40 years, the vineyard is farmed according to organic principles. Every other row is grassed, and soil work is carried out mechanically between the vines. All other work in the vineyard is done by hand.
The vintage
The 2021 vintage in the Jura was marked by a harsh winter with a period of intense frost. The milder spring allowed flowering at the end of May, followed by particularly rainy months in June and July. From mid-July to mid-August, the weather turned unsettled before more favorable conditions returned, allowing the grapes to reach fine ripeness.
Vinification and aging
The Tradition 2021 is harvested by hand. The grapes are pressed as whole clusters before settling. Alcoholic fermentation takes place in stainless-steel tanks with indigenous yeasts. The wine then ages for at least two years in 228-liter oak barrels, without topping up, under a layer of yeast. This method of oxidative aging gives the wine its distinctive aromatic characteristics.
