The Estate
Domaine Henri Boillot traces its origins back to 1885 with the Boillot family in Burgundy. Henri Boillot joined the family estate in 1975 before creating Maison Henri Boillot in 1996. In 2005, he bought out the family shares and renamed the estate after himself. Based in Meursault, the domaine covers 15 to 19 hectares split between white and red grape varieties. Since 2008, his son Guillaume has joined him and oversees the vinification of the red wines. A pioneer of ultra-sustainable viticulture as early as the 1990s, the estate has established itself as a benchmark for its white wines and is building a growing reputation for its exceptional reds.
The Vineyard
Chambertin is one of the most prestigious terroirs in the Côte de Nuits, located on the slopes above Gevrey-Chambertin. This grand cru spans a total area of 12.9 hectares. The vines grow on limestone soils enriched with clay, benefiting from a particularly favorable southeast exposure. Planting density reaches 10,000 vines per hectare, encouraging optimal expression of the terroir. Chambertin’s parcels enjoy specific microclimatic conditions that contribute to the complexity of the wines produced from this outstanding appellation.
The Vintage
The year 2021 in Burgundy began with a harsh winter, marked by spring frost episodes of rare intensity. Flowering took place at the end of May under milder conditions. June and July saw significant rainfall, followed by a period of weather instability from mid-July to mid-August. Late-summer conditions nonetheless made it possible to achieve satisfactory grape ripeness, giving rise to balanced wines despite the climatic challenges encountered during the growing season.
Vinification and Aging
The Chambertin Grand Cru 2021 was crafted using whole-cluster vinification, incorporating the stems into the fermentation process. This technique brings complexity and finesse to the wine. Aging took place in oak barrels, with 50% new barrels and the remainder in once-used barrels. This measured approach enriches the wine’s structure while preserving the authentic expression of the terroir and the delicacy of the fruit.
