The estate
Founded in 1997 by Nicolas Rossignol, Domaine Nicolas Rossignol represents the fifth generation of winegrowers on the terroirs of Volnay. Starting with three hectares, the estate now spans around seventeen hectares across nearly thirty appellations in the Côte de Beaune. In 2011, Nicolas Rossignol consolidated the family estates under a single entity and established his facilities in Beaune. Trained in Burgundy and enriched by international experience in South Africa and the Rhône Valley, Nicolas Rossignol manages his vineyard according to sustainable farming principles, incorporating biodynamically inspired practices and respect for the lunar calendar. The estate is renowned for its elegant wines that express the diversity of Burgundy’s terroirs with finesse.
The vineyard
The climat of Reversées stands out for its north-facing exposure, unusual for a premier cru of Beaune. This aspect gives the site a cooler microclimate than parcels facing east or southeast. The clay-limestone soils, with a higher clay content, promote good water retention and contribute to aromatic concentration. This combination of a cool exposure and clay-rich soils makes it possible to produce wines that favor aromatic finesse and the preservation of natural acidity rather than power and maximum extraction.
The vintage
The 2021 vintage in Burgundy was marked by contrasting weather conditions. After spring frosts reduced yields, the months from May to July remained cool and wet, significantly delaying ripening. This extended ripening period allowed the grapes to reach adequate maturity while retaining high natural acidity. These conditions favored the production of balanced wines, emphasizing freshness and tension rather than excessive concentration.
Winemaking and aging
The grapes for the Beaune 1er cru "Reversées" 2021 are harvested by hand and carefully sorted before being placed in small eight-kilogram crates. Alcoholic fermentation takes place with indigenous yeasts, without the addition of commercial yeasts, and lasts between six and eight days. During this period, punch-downs and pump-overs are carried out according to the needs of the vintage. Total maceration lasts around twenty days. Aging takes place in 228-liter oak barrels for ten to twenty months depending on the characteristics of the vintage, with the proportion of new barrels adjusted between 0 and 50%. Malolactic fermentation is deliberately delayed until the spring following the harvest, around six months after alcoholic fermentation. The wine remains on fine lees without racking throughout the entire aging period. No fining or filtration is carried out before bottling.
