A Greek white wine revealing Santorini’s unique minerality
The estate
Founded in 1991 by Paris Sigalas from his grandfather’s family vineyard, Domaine Sigalas has established itself as a Santorini benchmark. Located in Oia on volcanic soils, the estate has cultivated its vines organically since 1994, using the traditional kouloura technique to protect the vines from the strong Cycladic winds.
The vineyard
Shaped by powerful volcanic eruptions 3,700 years ago, the sublime terroir of Santorini almost disappeared forever. Fortunately, the outcome was quite different: like true architects, the winemakers of these exceptional Cyclades terroirs managed to build what would become one of the world’s oldest vineyards. Its volcanic soil, nest-shaped pruned vines, and the unique climate of the Oia plain shape this remarkable terroir.
The wine
Assyrtiko Barrel is a Santorini wine made from vines over 60 years old rooted in the volcanic soils characteristic of this appellation, giving the wine its distinctive minerality and aromatic complexity.
Vinification and aging
The grapes are hand-sorted and then gently whole-cluster pressed. Fermentation takes place in stainless steel tanks at controlled temperatures, followed by aging on the lees for at least 6 months in barrels (10% new) with regular bâtonnage to develop the wine’s aromatic complexity and creamy texture.
