Tasting

Color

The wine displays a deep ruby-red color with purplish highlights typical of a young Pinot Noir from a favorable vintage.

Nose

The nose reveals remarkable aromatic complexity, unfolding notes of blackcurrant and blackberry alongside stone fruits. Delicate floral touches mingle with subtle mineral impressions that reflect the iron-rich clay-limestone terroir of the climat Chanlins.

Palate

The attack is gentle and supple, expressing red-fruit flavors before developing layered complexity through the mid-palate. The tannic structure is sophisticated and well integrated, offering a silky, refined texture. The finish lingers with notable length, gradually revealing additional nuances and a saline mineral dimension that persists long afterward.

Food and wine pairings

This Pommard 1er Cru "Chanlins" 2019 pairs perfectly with braised red meats such as boeuf bourguignon or coq au vin. It also matches beautifully with roasted poultry, notably duck or pheasant, as well as aged washed-rind cheeses such as Époisses. Mushroom-based dishes, whether creamy or simply sautéed, also make excellent pairings.

Serving and cellaring

The estate

Founded in 1997, Domaine Nicolas Rossignol now spans 17 hectares across the Côte de Beaune in Bourgogne. Representing the fifth generation of winegrowers in Volnay, Nicolas Rossignol personally runs this family-owned, independent estate. After training at the Beaune wine school and international experience in South Africa and Bordeaux, he developed an approach combining Burgundian tradition with contemporary precision. The estate has grown progressively, notably in 2011 with the merger with Domaine Rossignol-Jeanniard, reaching around thirty distinct appellations and cuvées. Recognized as a rising star of the Côte de Beaune, the estate stands out for wines that balance power and elegance, true to the expression of their terroirs.

The vineyard

The climat Chanlins-Bas lies in the southern part of the Pommard appellation, close to the prestigious climat Rugiens. The vines benefit from an optimal southeast exposure and grow on clay-limestone soils enriched with iron elements, giving the earth a reddish hue. This distinctive mineral composition brings structure and complexity to the wine. The altitude and natural drainage of the site enable a gradual ripening of the grapes, encouraging the development of complex aromas and refined tannins.

The vintage

The 2019 vintage in the Côte de Beaune benefited from favorable climatic conditions. Adequate rainfall during the growing season was followed by warm summer temperatures that promoted optimal ripening. Harvest took place in dry, sunny weather, allowing grapes to be picked at ideal maturity. These conditions produced wines with a bright ruby color, complex aromas combining red and black fruits with floral and mineral notes, and a refined tannic structure reflecting the vintage’s balance.

Winemaking and aging

The grapes for Pommard 1er Cru "Chanlins" 2019 are harvested by hand and transported in small 8-kilogram crates to preserve their integrity. After sorting on a vibrating table, fermentation takes place with indigenous yeasts over six to eight days, with punch-downs and pump-overs adapted to the characteristics of the vintage. Aging is carried out on fine lees for ten to twenty months in oak barrels, with the proportion of new oak varying according to the wine’s needs. Malolactic fermentation is deliberately delayed by about six months to encourage the development of aromatic complexity. The wine is bottled without fining or filtration, thus preserving the full range of its sensory characteristics.
