The estate
Founded in 1997 by Nicolas Rossignol, a fifth-generation winegrower in Volnay, Domaine Nicolas Rossignol now covers around 17 hectares in the Côte de Beaune. Based in Beaune since 2011, the estate produces nearly thirty different appellations across Volnay, Pommard, Savigny-lès-Beaune, Beaune and Aloxe-Corton. Nicolas Rossignol manages his vineyard according to sustainable farming principles inspired by biodynamics and favors an infusion approach to winemaking rather than extraction, allowing each terroir to be expressed with purity.
The vineyard
The Climat "Fourneaux" lies mid-slope in the commune of Savigny-lès-Beaune, benefiting from an ideal south-west exposure. The soils are made up of Bathonian marls and limestone, noted for their lightness and reddish hue scattered with stones. This privileged setting allows Pinot Noir to ripen optimally.
The vintage
The 2021 vintage ranks among the most challenging ever experienced in Burgundy. A devastating frost in April, followed by a cool May and a humid summer with the threat of hail, led to exceptionally low yields, around 30% below 2020. Despite these extreme conditions, attentive winegrowers were able to produce wines of great finesse, favoring freshness and elegance with moderate alcohol levels around 12.5%.
Winemaking and aging
Winemaking for the Savigny-Lès-Beaune 1er Cru "Fourneaux" 2021 follows a traditional approach, with hand-harvesting into small 8-kilogram crates. After rigorous sorting, fermentation begins spontaneously with native yeasts and lasts between six and eight days. Aging takes place over a period of ten to twenty months in oak barrels, on fine lees without racking. Malolactic fermentation is deliberately delayed by around six months to enhance aromatic complexity. The wine is bottled without fining or filtration.
