The estate
Founded in 1997, the Domaine Nicolas Rossignol is based in Beaune. This estate is an essential benchmark in Burgundy. Nicolas Rossignol, born in 1974 and representing the fifth generation of winegrowers in Volnay, started out with 3 hectares of vines. After merging with the family estate Rossignol-Jeanniard in 2011, the property now spans around 17 hectares across some thirty different appellations in the Côte de Beaune. Nicolas Rossignol, owner and winemaker, practices sustainable viticulture guided by biodynamic principles, without chemical inputs. His philosophy is to vinify each terroir separately to express its uniqueness, earning him international recognition.
The vineyard
The Climat Les Mitans is located in Volnay, on a gentle slope with a slight south-east exposure, at an altitude of around 250 meters. Its name comes from an old French word meaning “middle” or “center,” referring to its central position within the appellation. The plot lies on dense, rich clay soils of dark brown color, not high in iron. Around 20% of the surface is covered with small limestone stones. This plot was acquired by Nicolas Rossignol in 2018, making the 2019 vintage the second produced by the estate for this climat.
Winemaking and aging
The harvest for the Volnay 1er cru "Mitans" 2019 is carried out exclusively by hand, following traditional Burgundian techniques. Each bunch is placed in small 8 kg crates to avoid any handling between picking and sorting. The 2019 vintage is fully destemmed. Alcoholic fermentation starts naturally with indigenous yeasts and generally lasts between 6 and 8 days. Aging takes place on fine lees for 10 to 20 months depending on the vintage, without racking, with 15% new oak. Malolactic fermentation is deliberately delayed to begin around 6 months later, the following spring, in order to bring greater aromatic complexity and structure. The wine is bottled without fining or filtration.
