    Appearance
    The appearance is a deep, shiny red.

    Nose
    The intense bouquet reveals aromas of red and black fruit, particularly cherry, raspberry and blackberry. These fruity notes are accompanied by elegant nuances of sweet spices. As it develops, the wine reveals nuances of tea and cocoa.

    Palate
    The palate seduces with its fleshy and supple texture. Velvety tannins ensure beautiful elegance, while the finish lingers at length on aromatic notes reminiscent of the fruity scents of the nose.

    Food and wine pairings

    This Premier Cru pairs perfectly with roasted meats or meats in sauce, whether beef, duck, pork or game. It also accompanies medium to strong cheeses. The ideal combination is a beef fillet in a spice crust.

    Service and storage

    The Aloxe-Corton 1er cru "Clos des Maréchaudes" Domaine du Pavillon 2022 is ideally served at a temperature between 16 and 17°C. This wine has a cellaring potential until 2027 and beyond.

    A Premier Cru from the great terroirs of the Corton hill

    The estate

    Founded in 1831 by Bernard Bichot in Monthélie, the Albert Bichot House settled permanently in Beaune in 1912. Under the management of Albéric Bichot, representing the sixth generation to run the independent family business, over 100 hectares have been managed since 1996, spread across six Burgundian estates: Clos-Frantin and Château-Gris in the Côte de Nuits, Le Pavillon in Pommard, Adélie in the Côte Chalonnaise, Rochegrès in Beaujolais and Long-Depaquit in Chablis. Certified organic since 2014, Albert Bichot mainly cultivates Pinot Noir, Chardonnay, Gamay and Aligoté.

    The vineyard

    Clos des Maréchaudes is a Monopole of Domaine du Pavillon with a total area of 2 hectares and boasts the rare distinction of including both Grand Cru and Premier Cru within the same Clos. The plot of this Premier Cru from Aloxe-Corton covers 1.40 hectares in the lower part of the Clos, at the foot of the hill, partly on a slope. This location benefits from an East-Southeast exposure, making this Climat one of the sunniest on the Corton hill. The 35 to 40-year-old vines are rooted in brown limestone soils on scree, which are less clay-rich and slightly deeper than in the upper part, favouring early ripening. The site has been historically mentioned since the 13th century under the name "En Mareschaut", as the lower part of Aloxe-Corton near the Lauve spring was marshy before being drained and planted.

    Winemaking and aging

    The harvest is carried out manually, followed by sorting upon arrival at the winery. Vatting takes place in temperature-controlled wooden vats for 18 to 21 days. The Aloxe-Corton 1er cru "Clos des Maréchaudes" Domaine du Pavillon 2022 is then aged for 14 to 16 months in oak barrels, using 25% to 35% new wood.
