    A full-bodied Chablis with signature minerality

    The estate

    Founded in 1815 by Charles Louis Noël Billaud, Domaine Billaud-Simon is one of Chablis’ most prestigious estates in Burgundy. Acquired in 2014 by the Faiveley family, represented by Erwan Faiveley, the estate spans 17 hectares, including four grands crus (Les Clos, Vaudésir, Les Preuses, Les Blanchots) and four premiers crus. Under the direction of Olivier Bailly, oenologist and CEO since 2014, the estate obtained organic certification in July 2025. The domaine stands out for its old vines averaging fifty years of age, planted on the Kimmeridgian soils characteristic of the appellation, and for minimalist winemaking that favors the pure expression of terroir and minerality.

    The vineyard

    This Chablis comes from carefully selected plots located in the finest areas of the village appellation. The vines, averaging around fifty years old, are rooted in the famous Kimmeridgian soils, made up of limestone and marine fossils dating back 155 million years. This unique geology gives the wine its hallmark minerality and the iodine-tinged notes so typical of the appellation.

    The vintage

    The year 2021 in Burgundy proved particularly demanding for winegrowers. After a mild winter, spring was marked by episodes of frost in April, followed by a changeable summer and delicate harvest conditions. Despite these climatic challenges, the vintage produced wines of great freshness, with vibrant acidity and a strong expression of terroir, reminiscent of classic Chablis from the 1980s.

    Winemaking and aging

    The grapes are hand-sorted at the estate and then gently pressed. Fermentation for the Chablis Village 2021 takes place with indigenous yeasts in temperature-controlled stainless-steel tanks, helping preserve the purity of the fruit. Aging is carried out entirely in stainless-steel tanks, without any contact with oak, in order to retain the freshness and mineral expression that are hallmarks of the estate.
