The estate
Located in Prémeaux-Prissey, in the heart of the Côte de Nuits in Burgundy, Domaine des Perdrix was taken over by the Devillard family in 1996 and today belongs to the Domaines Devillard group, led by Amaury and Aurore Devillard. The estate covers around fifteen hectares, including a near-monopoly on the Premier Cru Nuits-Saint-Georges "Aux Perdrix" and a parcel in Echezeaux Grand Cru. This high proportion of Premiers Crus makes it one of the benchmark estates of the Côte de Nuits.
The vineyard
The climat Les Terres Blanches lies to the south of Nuits-Saint-Georges, on a gentle south-east-facing slope, just above the Premier Cru Aux Perdrix. The clay-limestone soils, predominantly clay, give this terroir a personality that is both generous and mineral. The parcel dedicated to Chardonnay covers a small area of just 0.33 hectares, making it one of the rare white expressions of the Nuits-Saint-Georges appellation, which is traditionally dominated by Pinot Noir.
Winemaking and ageing
For the production of the Nuits-Saint-Georges 1er Cru "Les Terres Blanches" 2025, the grapes are hand-harvested and hand-sorted, then transferred whole to tank for pressing in a pneumatic press. After a night of cold settling, the juice is transferred by gravity into 228-litre Burgundy barrels made of lightly toasted French oak, where alcoholic and malolactic fermentations take place. Ageing then continues in barrel, followed by a light filtration prior to bottling.
Grape variety
This wine is made from 100% Chardonnay, a traditional Burgundy grape variety that is expressed here on a clay-limestone terroir that is rare within the Nuits-Saint-Georges appellation.
