    Appearance

    The estate

    Created in 2003 by Julien and Delphine Zernott, the Domaine du Pas de l'Escalette spans around twenty hectares of terraces at 350 meters above sea level, at the foot of the Larzac plateau in Pégairolles de l'Escalette. This Languedoc estate farms certified organic and biodynamic vineyards (FR-BIO-01 and Biodyvin), growing regional grape varieties such as Grenache, Carignan, Syrah, and Terret Bourret. The altitude gives the wines remarkable freshness and tension, true signatures of the estate. Low-intervention winemaking favors the authentic expression of the limestone terroir.

    The vineyard

    The vines dedicated to this Les Clapas Blanc cuvée are planted on the foothills of the Larzac plateau, in the valleys of Pégairolles de l'Escalette and Lauroux. The terroir is made up of deep clay-limestone soils and limestone scree. The vineyard combines old vines over 50 years of age trained in goblet pruning with new plantings from massal selections. This cuvée is classified as IGP Pays de l'Hérault.

    Winemaking and aging

    The grapes from the 2023 vintage are harvested by hand and then pressed directly. Alcoholic fermentation takes place in barrels and in 13-hectoliter conical wooden vats with indigenous yeasts. Malolactic fermentation is carried through to completion. Aging for this Languedoc wine takes place in conical vats.

    Grape varieties

    Grenache Blanc (40%), Carignan Blanc (40%), Grenache Gris (10%), and Terret Bourret (10%).
