Tasting
Colour
A deep ruby hue unfolds in the glass, enhanced by delicate violet highlights typical of its youth.
Nose
The bouquet opens with intense aromas of red and black fruits, such as blackcurrant and blackberry. It then evolves towards floral notes of violet, herbs and spices, underscored by a subtle mineral and saline touch.
Palate
The palate offers a lovely textural breadth supported by refined, perfectly integrated tannins. The bright acidity preserves a beautiful freshness, leading to a persistent finish marked by mineral definition and touches of candied fruit.
Food and wine pairing
This red wine pairs wonderfully with poultry dishes in sauce, such as duck breast with cherries or herb-roasted chicken. It will also enhance grilled meats, a mushroom gratin, or washed-rind cheeses such as Saint-Marcellin.
Service and storage
For optimal tasting, this wine is best served between 15 and 16°C. Approachable already today, this 2022 vintage will continue to develop favourably in the cellar for about ten years.

The estate
Created in 2002 following the division of the historic family estate, Domaine Louis Boillot is today run by Louis Boillot, his wife Ghislaine Barthod, and their son Clément. Originally established in Burgundy, the estate has extended its vineyard holdings into Beaujolais. The estate stands out for its environmentally respectful approach, favouring sustainable farming practices and minimal-intervention winemaking. Drawing on its old vines, the estate is committed to producing authentic wines that combine the precision of Burgundian techniques with the singular expression of each terroir.
The vineyard
Hailing from the Moulin-à-Vent appellation, this cuvée comes from the historic lieu-dit "Les Thorins". The vines flourish on south and southeast-facing slopes, benefiting from generous sunshine and consistent winds. The deep soils are composed of decomposed granite, red sand, clay, and iron oxides, enriched with manganese. The vineyard is farmed according to sustainable principles, without synthetic chemical products, and the grapes are harvested exclusively by hand.
The vintage
The year 2022 was marked by particularly demanding weather conditions, with significant heat episodes causing water stress for the vines. Despite these climatic challenges and an accelerated ripening period, the growing cycle was successfully completed, allowing for the harvest of berries with beautiful concentration.
Winemaking and aging
This wine is crafted using traditional Burgundian methods. After near-total destemming, the grapes undergo a cold maceration. Fermentation begins spontaneously through native yeasts, accompanied by gentle pump-overs for a soft extraction. The wine is then aged for 15 to 18 months in oak barrels, a small proportion of which are new, as well as in larger-volume vessels. The wine is bottled without fining or filtration.
