    Color
    The wine displays a pale yellow hue with green highlights, enlivened by a fine, dense effervescence that reflects the elegance of this crémant.

    A biodynamic Crémant du Jura of remarkable elegance

    The estate

    Established in 1794 following the acquisition of a 13th-century cellar founded by Carthusian monks, the Domaine Pignier now extends over 15 hectares in AOC Côtes du Jura. Run by the family’s seventh generation—Antoine, Jean-Étienne and Thibaut Pignier—the estate has been cultivating seven grape varieties under Demeter-certified biodynamics since 2003. The only winegrowers in the village of Montaigu, they embody Jura excellence.

    The vineyard

    The Crémant du Jura comes from vines located in the Val de Sorne, on the southern slope of Montaigu. The parcels benefit from south and southeast exposure and are planted on iridescent Keuper marls. Farmed under Demeter-certified biodynamics, the vines are hand-harvested with sorting in the vineyard, with grapes transported in small crates to preserve their integrity.

    The vintage

    The 2023 vintage in the Jura stands out for its generosity and remarkable quality. Rainfall and sunshine came at just the right times, enabling optimal grape ripening. Harvest took place between August 30 and September 7, 2023.

    Winemaking and aging

    Farmed under Demeter-certified biodynamics, the vines are hand-harvested with sorting in the vineyard, with grapes transported in small crates to preserve their integrity. Crémant du Jura Brut Nature is produced using the traditional method. Fermentation is carried out with indigenous yeasts, followed by aging of the base wine in oak foudres and barrels. Bottling (tirage) was carried out in spring 2024 on a flower day, followed by 18 months of aging on laths. Disgorgement began in September 2025, with no dosage liqueur added (0 g/L), expressing the pure brut nature style.
