    An elegant, deep red wine from the Côtes du Jura

    The estate

    Located in Montaigu near Lons-le-Saunier, the Domaine Pignier carries on a winegrowing heritage founded in the 13th century by Carthusian monks. This family estate farms vineyards in AOC Côtes du Jura across several sites. A pioneer of biodynamics in the Jura, the estate stands out for its exceptional terroirs, situated at the junction of the Reculées de la Vallière and the Val de Sorne.

    The vineyard

    This wine from Côtes du Jura comes from the Reculée du Val de Sorne, on the south-facing slope of Montaigu. The vines benefit from a south to southeast exposure on sandstone soils as well as black, rich, slate-bearing Rhaetian (Triassic) marls. The vineyard is farmed under certified Demeter biodynamics and is planted in a field blend with Trousseau noir (old mass selections), Gros Trousseau, Poulsard, and a few Enfariné vines. Vineyard work focuses on short pruning, shoot thinning, and manual leaf removal to limit yields.

    Vinification and aging

    The harvest took place on September 29 and 30, 2023, by hand, with selection in the vineyard. The Trousseau 2023 is vinified as a red wine using the traditional Jura-method, with complete destemming. Fermentation is carried out with indigenous yeasts, with no chaptalization and no added enological additives. Aging lasts 10 months in oak barrels (demi-muids and pièces). The wine is bottled unfiltered on a fruit day, with natural cork.
