    Tasting Notes

    Appearance
    This wine reveals a deep red colour, with hints ranging from ruby to purple in its youth.

    Nose
    The bouquet is highly approachable and generous, dominated by clean aromas of ripe red and black fruits such as cherry, blackcurrant and raspberry. Subtle touches of sweet spice and a delicate oakiness round out this aromatic palette.

    Palate
    The attack reveals a full-bodied and particularly flavourful profile. The wine shows ample richness, supported by well-integrated tannins that provide structure without any harshness. The fruit is smooth and ripe, extending into a finish of impressive persistence.

    Food and Wine Pairings
    This cuvée pairs perfectly with roasted red meats or grilled dishes, such as a fine cut of beef or lamb. It will also wonderfully complement confit poultry or traditional stewed dishes, such as beef bourguignon.

    Serving and Cellaring
    The 2023 Mercurey Village "Chamirey" is a wine best enjoyed for its fruit while young, and can be drunk until around 2028. To fully appreciate its aromatic complexity, it is recommended to serve it at a temperature between 16 and 17°C.

    The Elegance and Generosity of a Great Mercurey Pinot Noir from Domaine Raquillet

    The Estate
    Heir to a winemaking lineage spanning eleven generations, Domaine Raquillet was officially taken over and modernised in 1990 by François and Emmanuelle Raquillet. Joined by their daughter Jeanne in 2018, the current owners oversee a 14-hectare vineyard located at the heart of the Côte Chalonnaise, in Burgundy. Recognised as one of the most talented producers of its appellation, the estate stands out for its rigorous and environmentally conscious approach, illustrated by a Haute Valeur Environnementale (High Environmental Value) certification obtained in 2022.

    The Vineyard
    The grapes come from a small 0.21-hectare plot located on the Chamirey climat, within the Mercurey appellation. Facing due east to benefit from optimal sunlight, the vines, around fifteen years old, thrive on a clay-limestone terroir. Vineyard management follows a strong environmental approach, including simple Guyot pruning, regular mechanical ploughing, and meticulous green work such as bud removal and leaf thinning to ensure the grapes are in perfect health.

    Winemaking and Ageing
    To craft the 2023 Mercurey Village "Chamirey", the grapes are hand-harvested in crates, followed by rigorous sorting at the winery. The berries are fully destemmed, then transferred by gravity into stainless steel vats. A cold pre-fermentation maceration is carried out at 12°C for five days. Alcoholic fermentation begins naturally, driven by indigenous yeasts. Extraction is gentle, with no punching down, and only two daily pump-overs during the 15 to 20 days of vatting. After pressing, malolactic fermentation and ageing take place in oak barrels, 10% of which are new, for ten months before bottling.
