    Colour
    The colour reveals a pale yellow hue enhanced by delicate green highlights.

    Nose
    The bouquet reveals itself as fresh and complex, offering aromas of white fruits and citrus such as lemon and grapefruit. Subtle floral and fresh herb notes intertwine with a characteristic minerality reminiscent of gunflint.

    Palate
    The attack is marked by a tonic liveliness and a lovely freshness. The palate surprises with its breadth and body, revealing notes of yellow fruits carried by a structuring acidity that stretches the wine towards a persistent and elegant finish.

    Food and wine pairing

    This white wine from France pairs wonderfully with seafood, such as delicate white fish, oysters or scallops. It also pairs very well with spring salads, roasted vegetables, fine cured meats, or creamy cheeses like reblochon and comté. It can also be served as an aperitif, traditionally combined with blackcurrant liqueur to make a kir.

    The estate

    Founded in 1880 in Beaune, the House of Joseph Drouhin is a true institution in Burgundy. Now led by the fourth generation, with Frédéric Drouhin as president and Véronique as head winemaker, the family carries on a historic expertise. A pioneer of sustainable agriculture, the estate stands as the largest biodynamic producer in the region. Its vast vineyard spans around a hundred hectares, from Chablis to Mâcon, reflecting a constant pursuit of the authentic expression of the terroirs.

    The vineyard

    The grapes for this Bourgogne wine come mainly from the Hautes Côtes de Beaune, the Hautes Côtes de Nuits, and the Côte Chalonnaise. These high-altitude terroirs stand out for their varied exposures and complex soils blending clay and limestone. The vineyard is cultivated according to biodynamic principles, favouring horse ploughing and permanent cover cropping to preserve soil vitality. The harvest is carried out by hand in small perforated crates.

    The vintage

    The year 2023 ranks among the warmest ever recorded in the region. After a mild spring, summer was marked by intense heat offset by cool nights and moderate rainfall. These ideal weather conditions allowed for an early harvest, yielding grapes with optimal ripeness and perfect balance.

    Winemaking and aging

    The production of this Bourgogne Aligoté 2023 relies on gentle methods that respect the fruit. As soon as the grapes arrive at the winery, they undergo slow pressing using pneumatic presses. This technique allows for a gradual extraction of the juice, avoiding bitterness and preserving all the finesse and aromatic purity of the grape variety.
