Tasting
Nose
The nose reveals itself to be fine and rich. It unveils delicate aromas of pear and rice, enhanced by notes of white truffle and lilac. A herbaceous touch completes this refined aromatic palette.
Palate
The palate shows density and concentration. The attack evokes pear accompanied by notes of yeast and cinnamon. The palate then evolves toward generous exotic fruits: very ripe banana, pineapple, and lychee bring remarkable richness. The finish stretches out at length, supported by aromas of yeast, melon, and fig that evoke a traditional okashi. Dried fruits, notably fig and date, express themselves with elegance on the finish.
Pairings and tasting occasions
This junmai daiginjo pairs particularly well with Western cuisine, notably more buttery or oily preparations. Serve at a cool temperature, between 10 and 12°C. Once opened, this sake keeps for up to approximately 2 months in the refrigerator.

Kuheiji 35 Junmai Daiginjo, formerly named "Betsu-atsurae," represents the pinnacle of the Kuheiji range available in France, alongside Junmai Ginjo Kuheiji 55 and Junmai Daiginjo Kuheiji 50. This exceptional sake distinguishes itself through its extreme polishing ratio (seimaibuai) of 35%, meaning that 65% of each grain of rice has been meticulously polished to retain only the purest heart.
Crafted according to the junmai method, this sake contains no added distilled alcohol, guaranteeing an authentic expression of fermented rice. Bottled without reduction (genshu), it retains its natural alcohol content of 16% and all its aromatic richness. Presented in a 0.72-liter format accompanied by an elegant case, Kuheiji 35 Junmai Daiginjo embodies the perfect harmony between richness, minerality, and acidity that defines the signature of Banjo Jozo.
