Combining artisanal techniques with meticulous selection, Seventy One—its name nodding to a maturation of 71 nights—offers complex, refined English gins.
Seventy One, a house born from an artistic vision
The house was born from the singular vision of London photographer Mert Alas, who set out to reinvent gin by drawing inspiration from the art of perfumery. Guided by his artistic sensibility, he partnered with renowned master distiller Steve Wilson, celebrated for iconic creations in the worlds of whisky and gin (Bombay Sapphire, Tanqueray Ten, Johnnie Walker). From this encounter emerged a high-end gin, both distinctive and refined, crafted to be savored like a great spirit rather than merely mixed into cocktails.
An exceptional distillery, where terroir meets craftsmanship
Origins of a prestigious bottle Distillation takes place in England, a land with a temperate climate and a centuries-old tradition in the art of spirits. While many ingredients come from the Mediterranean basin, the house places particular emphasis on the traceability of its botanicals and the quality of the water used—both essential to achieving the desired purity and aromatic richness.
Rare ingredients, harvested with care
The philosophy embraces a commitment to resource preservation and the celebration of rare plants. Each ingredient is hand-picked following a rigorous selection based on seasonality and origin.
Traditional botanicals (juniper, coriander, angelica, lemon zest) are joined by exceptional ones: the “Queen of the Night,” a cactus flower that blooms only once a year, and the delicate Damask rose.
Steve Wilson, renowned master distiller
With over forty years of experience, Steve Wilson and his team oversee gin creation with a perfumer’s approach: each botanical is distilled separately to preserve the essence of its aroma before being assembled with jeweler-like precision.
A demanding production process
Every hand-picked component macerates for 24 hours in neutral grain spirit, patiently capturing the quintessence of its aromas. This meticulous extraction ensures optimal flavor expression.
The gin is then matured for 71 nights in three types of casks: new European oak, imparting power and vanilla notes; Cognac casks, adding a hint of rancio; and Pedro Ximénez casks, revealing dried-fruit nuances. This extended maturation grants the spirit rare complexity and remarkable roundness.
A style marrying refinement and complexity
The result is a gin with a singular identity: bold and structured, unveiling subtle aromas of jasmine, rose, citrus oils, baked apple, and ripe pear, elevated by hints of honey, vanilla, and cinnamon. The finish is supple, persistent, rich, and elegant.
This prestigious bottle also comes in a refined set, the “Nocturnal Pleasure Set: The Night, the Love & the Poem,” containing a literary triptych with reissues of Dante’s Inferno, Brontë’s Wuthering Heights, and Wilde’s The Picture of Dorian Gray, published by Seventy One Editions.
Gourmet pairings
Thanks to its refined style and aromatic structure, it lends itself to bold pairings with fine foods: it pairs beautifully with oysters, sashimi, lemon-basil tartlets, or desserts featuring dark chocolate and red fruits.
Its fresh, elegant flavors enhance briny and spiced products while revealing the finesse of dishes with subtle or floral aromas.
Mixology: between minimalist and daring composition
This gin can be enjoyed neat, on the rocks, or in cocktails, revealing great aromatic complexity that allows it to excel in minimalist compositions. It harmonizes with high-quality ingredients: floral liqueurs, fresh citrus, or elegant bitters reveal its full depth.
