Food and wine pairings
This cuvée pairs beautifully with delicate dishes such as white fish, shellfish, or raw preparations like sushi and sashimi. It also elegantly accompanies pan-seared scallops, tender roasted poultry, as well as creamy risotti with seafood or mushrooms.
Serving and cellaring
To fully appreciate this Franciacorta, it is recommended to serve it at a temperature between 10 and 12°C, ideally in a tulip-shaped glass. Thanks to its structure and extended ageing, this wine offers excellent cellaring potential and can be kept in the cellar for several years after disgorgement.

The estate
Officially founded in 1969, the Ca' del Bosco estate is a true pillar of Lombardy. Now spanning approximately 270 hectares farmed organically, this property has established itself as a benchmark of Italian excellence. At the origin of this success, Maurizio Zanella shaped the identity of the estate, combining technical innovation with respect for nature. Today, the capital is majority-owned by the Herita Marzotto investment group, while the founding Zanella family retains a significant share, thereby ensuring the continuity of this exceptional vineyard.
The vineyard
The grapes for this cuvée come from forty distinct plots located in the heart of the Franciacorta appellation, spread across the municipalities of Erbusco, Adro, Cazzago San Martino, Corte Franca and Passirano. This terroir, cultivated according to the principles of organic farming, comprises twenty-five Chardonnay vineyards with an average age of 24 years, thirteen plots of Pinot Noir of around 28 years, and two Pinot Blanc vines with an average age of 32 years.
The vintage
For this year, the harvest began on 17 August 2021. Average yields amounted to 6,300 kilograms of grapes per hectare, corresponding to a volume of 2,750 litres of wine, or an extraction ratio of 43%.
Winemaking and ageing
The production of this Extra Brut 2021 begins with a rigorous manual selection of the bunches, which are then chilled and meticulously washed before pressing. The base wines undergo fermentation in small oak barrels, where they mature for five months. The final blend, bringing together forty base wines, is carried out seven months after the harvest. Following bottling in April 2022, the wine benefits from extended lees ageing lasting an average of 53 months. Disgorgement is performed under an oxygen-free environment, and each bottle receives an individual marking guaranteeing perfect traceability.
