Tasting
Appearance
The colour is a pale gold with subtle green highlights, accompanied by a fine, precise and persistent mousse that forms a delicate ribbon of bubbles.
Nose
The nose is pure and concentrated, opening with floral notes of acacia and hawthorn before giving way to hints of fresh citrus, lemon zest and grapefruit. With aeration, nuances of fresh brioche and toasted almond emerge, carried by a chalky, saline freshness.
Palate
The attack is incisive and vibrant, immediately revealing the taut character of the Avize terroir. The texture, at once silky and precise, is traversed by a saline thread that accentuates the wine's linearity and depth. Flavours of citrus peel, fresh hazelnut and crushed chalk unfold harmoniously, leading to a long, crystalline finish marked by pronounced minerality.
Food and Wine Pairing
This Champagne is an ideal companion for seafood, such as oysters, langoustines or a scallop carpaccio, as well as preparations like white fish ceviche. It also pairs very well with fresh, creamy cheeses, such as an ash-coated goat's cheese or a soft, creamy cheese like Brillat-Savarin.
Serving and Cellaring

The estate
Founded in 1834 in Épernay by Auguste Boizel and Julie Martin, the Champagne House Boizel today draws on 7 hectares of family-owned vineyards located in the finest crus of the Côte des Blancs, notably Avize and Le Mesnil-sur-Oger, complemented by partnerships with growers in the grands crus. Since 2019, the sixth generation, Florent and Lionel Roques-Boizel, has been running the House, with Florent serving as Chairman and Chief Executive Officer. Having remained family-run despite its integration into the Lanson-BCC group, Boizel cultivates an identity founded on precision and the expression of the Champagne chalk terroir.
The vineyard
This cuvée comes exclusively from the village of Avize, classified Grand Cru in the Côte des Blancs and entirely dedicated to Chardonnay. The slopes, facing east and south-east, rest on chalk of remarkable purity, allowing the vines' roots to dig deep and to express precisely the characteristics of this Champagne terroir. The Boizel family still owns vines in Avize today, a village closely tied to its heritage.
Vinification and ageing
Avize Blanc de Blancs Grand Cru 2020 is vinified 70% in stainless steel tanks and 30% in barrels, a split that combines the purity of Chardonnay with the complexity and texture imparted by oak. It then continues to age for five years on the lees, promoting a fine integration of the bubbles as well as a deeper aromatic maturation.
