Tasting
Nose
The nose opens with an intensely floral bouquet that quickly gives way to an abundance of red, black and blue fruits, revealing aromas of raspberry, cherry and blackberry. The whole is beautifully underlined by a palette of spices and subtle notes of chocolate.
Palate
The wine offers exceptional purity of fruit carried by a wonderfully linear framework. The tannins, while present and endowed with fine structure, prove silky and refined, illustrating a perfect balance between power and elegance.
Food and wine pairings
This great wine pairs wonderfully with roasted or braised meats, such as duck breast accompanied by a black cherry reduction, or game birds served with a mushroom sauce. It will also enhance dishes with Japanese influences, such as wagyu beef glazed with miso, as well as vegetarian dishes like wild mushroom risotto with truffle oil. As for cheeses, opt for cooked pressed cheeses such as Comté or Beaufort.
Serving and cellaring
To fully appreciate this vintage in its youth, it is recommended to decant it for two to three hours before serving. Endowed with remarkable ageing potential, it will be ideal to enjoy between approximately 2030 and 2060.
The elegance and purity of a great Saint-Émilion wine
The estate
Founded in 1782, Château Angélus is an emblematic estate of Bordeaux. Spanning 131 hectares, including 62 hectares in Saint-Émilion, the estate has been run by the de Boüard family for 8 generations. Today, Stéphanie de Boüard-Rivoal, representative of the eighth generation, leads it with a vision focused on organic viticulture and innovation. Recognised worldwide for its style combining power and delicacy, Château Angelus stands out for its independence and its deep commitment to the authentic expression of its exceptional terroir.
The vineyard
The vineyard dedicated to this wine extends over 32 hectares, ideally located on the famous "pied de côte" of the southern slope of Saint-Émilion. The vines, averaging 39 years old, thrive on a mosaic of clay-limestone and sandy soils benefiting from a favourable microclimate. Planting density varies from 6,500 to 8,500 vines per hectare. The vineyard management is certified organic, incorporating sustainable practices such as cover cropping between the rows to encourage biodiversity. Pruning respects the flow of sap, and the harvest is carried out manually at optimal ripeness.
The vintage
A mild winter followed by a cool and sunny spring laid the foundations for an exceptional vintage, providing the vines with ideal feeding conditions. The summer, marked by a few beneficial rains and two heatwaves, favoured small berries with thick skins, a guarantee of concentration and finesse. This vintage with its assertive and rare style for Bordeaux is the result of a generous climate perfectly mastered by the winemaker.
Vinification and ageing
2025 is the first vintage produced in the estate's new cellar. After a cold pre-fermentation maceration lasting from four days to a week, alcoholic fermentation takes place up to 28°C in wooden and stainless steel vats for the Merlot, and in concrete for the Cabernet Franc. A post-fermentation maceration of one to three weeks precedes immediate barrelling. The ageing extends over 22 months: the Merlot is aged in one-year-old barrels to preserve the brightness of the fruit, while the Cabernet Franc rests in a combination of 30-hectolitre foudres and new French oak barrels with fine grain and medium toast.
