A fresh, pure style, with lots of floral and black tea notes out front, followed by a tightly focused beam of red currant, plum and raspberry coulis flavors. The finish sports a mouthwatering chalky spine and lovely perfume that should develop more with time. For fans of minerality. Best from 2022 through 2032. 6,665 cases made.

Bright rose petals and raspberry notes on the nose. So floral. Supple and alive in the glass, I like the style to this, graceful but with grip to the slightly salty tannins. Does lose a bit of push towards the finish, just tapering slightly leaving gentle red berry fruit, liquorice, graphite and subtle spices lingering.

An enjoyably melted tannic structure, with the white pepper and saffron lick of limestone, a sappy rise on the finish, with raspberry, redcurrant, crushed roses, generous and creamy through the mid-palate (although you might want to head to the 2009 at this point for an even clearer example of that, as Canon takes time to reach its peak). This has poise and delicacy, and excellent balance. 36 hl/ha yield, 80% new oak, 3.7 pH, harvest September 29 to October 9. John Kolasa’s last vintage, with current director Nicolas Audebert overseeing ageing.

The 2014 Canon has a very well-defined, precise bouquet with ebullient raspberry and wild strawberry scents infused with minerals. The aromatics here are utterly captivating. The palate is medium-bodied with fine tannin and very well-judged acidity. There is tension and poise to this Saint Emilion, gently fanning out with a delicate spicy finish that lingers long in the mouth. Though surely destined to be over-shadowed by the extraordinary 2015, this Canon deserves a berth in your cellar.

Beautiful deep black hue.

Nose
The nose reveals remarkable finesse with aromas of blackberry and blackcurrant accompanied by very discreet oak notes. The bouquet also unveils floral notes of May rose, patchouli and peony, along with fragrances of ripe black fruit, cedar and chocolate. Nuances of crushed stone and fennel can also be found.

Palate
On the palate, the tannins are round, refined and elegant. The wine displays a harmonious structure combining tension and sweetness, with an explosion of fruit accompanied by spices, nougat and cocoa.

Food and Wine Pairing

This wine pairs perfectly with duck breast with blueberries.

Serving and Cellaring

Château Canon 2014 is best served at a temperature of 16°C. This wine is intended for several decades of aging and should be enjoyed by around 2040 or so.

A Harmonious and Elegant Premier Grand Cru Classé from Saint-Émilion

The Estate

Created around 1770 and officially named in 1853, Château Canon spans 34 hectares in Saint-Émilion. This Premier Grand Cru Classé B has belonged since 1996 to brothers Alain and Gérard Wertheimer, owners of Chanel. Located on the prestigious limestone plateau, the vineyard comprises 70% Merlot and 30% Cabernet Franc. Investment from the Chanel group has enabled constant modernization of the facilities. The acquisition of Château Matras in 2011 reflects the expansion ambitions of this Bordeaux reference estate.

The Vineyard

The vineyard of Château Canon extends over an exceptional terroir in Saint-Émilion, planted on a clay-limestone plateau facing south/southwest. The vines, averaging 30 years of age, benefit from a planting density of between 6,500 and 7,200 vines per hectare. This privileged terroir allows the Merlot and Cabernet Franc grape varieties to fully thrive on these limestone soils characteristic of the appellation.

The Vintage

The year 2014 was marked by a particularly mild winter followed by a rainy and early spring. Summer proved humid and cool before giving way to a magnificent Indian summer in the autumn. These contrasting weather conditions allowed the grapes to reach optimal ripeness, with harvesting taking place from September 29 to October 6 for the Merlot and from October 6 to 9 for the Cabernet Franc.

Winemaking and Aging

The winemaking of Château Canon 2014 is carried out plot by plot by gravity in temperature-controlled double-walled stainless steel tanks. After manual sorting and harvesting in small crates, the grapes benefit from gravity draining. Malolactic fermentation takes place one third in new barrels and two thirds in tanks. The aging lasts 18 months in French oak barrels with medium or medium-long toast, 80% of which are new, with gravity racking and egg white fining if necessary.
