Appearance
This wine reveals a deep, intense colour, enhanced by brilliant ruby highlights tinged with purple.
Nose
The bouquet reveals great aromatic purity, dominated by expressive notes of perfectly ripe red fruits.
Palate
The attack offers a texture that is both silky and particularly indulgent. With superb balance and lovely energy, this wine unfolds smooth, perfectly integrated tannins. The whole stretches out on a mouth-watering finish of great freshness that lastingly prolongs the brilliance of the fruit.
Food and wine pairing
This cuvée will pair wonderfully with flavourful red meats such as a rib of beef or a well-marbled ribeye steak. It will also enhance roast lamb with aromatic herbs, game dishes or rich mushroom-based preparations such as ceps and truffles.
The elegance and balance of a Saint-Émilion Grand Cru Classé
The estate
Acquired on a whim in 1955 by the industrialist Marcel Dassault, who gave it his name, this historic 19th-century estate has become a true benchmark within the Bordeaux vineyards. Elevated to Grand Cru Classé status in 1969, the estate covers 39 hectares. Today, Laurent Dassault heads the property, perpetuating the family's pursuit of excellence. The château stands out for its strong environmental commitment and the production of wines of great elegance.
The vineyard
The 33 hectares in production thrive on the northern slope of the famous Saint-Émilion hillside, offering a cooler microclimate that is ideal in the face of today's climate challenges. The vines, averaging 23 years of age, draw their complexity from a rich mosaic of soils: clay-limestone slopes, clay over a limestone substrate, as well as sandy-clay and clay-sandy terroirs. The estate practises sustainable viticulture, including grass cover, disbudding and shallow soil tillage. Strongly committed to biodiversity, the vineyard holds High Environmental Value level 3, ISO 14001 and Bee Friendly certifications.
The vintage
The year began with a mild, dry winter, encouraging an early budburst from the first days of April. Spring, marked by a rainy spell in April, quickly gave way to warm, dry weather. Flowering took place swiftly in mid-May, ensuring even ripening to come. The summer season proved particularly sunny with little rainfall, leading to a rapid véraison from 24 July. While the intense heat of August stimulated ripening, welcome rains at the end of the month allowed the berries to swell while moderating their sugar concentration.
Vinification and ageing
The harvest to produce this Château Dassault 2025 was the earliest in the property's history, beginning on 9 September and ending on 26 September. The richness in polyphenols led the technical team to opt for particularly gentle extractions. Vinification is carried out plot by plot in temperature-controlled stainless steel vats. The ageing stands out for its wide diversity of vessels in order to add complexity: 56% new barrels, 16% one-wine barrels, 13% large wooden casks, 11% concrete vats and finally 4% amphorae. Alcohol content: 13.5% vol.
