The estate
The estate's origins stretch back a very long way. Vines were already being grown on the slopes of what is now Château Pavie as early as the 4th century. Owned by Chantal and Gérard Perse since March 1998, Château Pavie, a 1er Grand Cru Classé "A", boasts one of the finest terroirs in Saint-Émilion.
Château Pavie is renowned for the structure and elegance of its wines, the result of yields kept deliberately below the appellation average in order to reveal every nuance of this exceptional terroir.
The vineyard
Château Pavie 2022 is a Saint-Émilion wine produced from a 42-hectare vineyard in a single block. Located to the south-east of the Saint-Émilion hill, the vineyard rises up the slope across three levels, with vines averaging 34 years of age. The "plateau" (85 metres above sea level) consists of clay-limestone soil over starfish limestone, while the "mid-slope" (55 metres above sea level) is made up of fine-textured brown clay-limestone soil. The "foot of the slope", meanwhile, is composed of sandy and sandy-clay soils as well as sandy-gravel soils.
Particular care is devoted to the vineyard, part of which has been replanted under a programme that included raising the trellising to increase leaf area, specific pruning according to the age of the vines, green harvesting and leaf thinning.
Vinification and ageing
Hand-harvested with sorting. Vinified in temperature-controlled wooden vats. Malolactic fermentation takes place in barrels, as does ageing (75% new barrels, 25% barrels previously used for one vintage).
Blend
Château Pavie 2022 is a blend of Merlot (52%), Cabernet Franc (30%) and Cabernet Sauvignon (18%).
