Tasting
Nose
The bouquet opens on a seductive marriage of red and black fruits at their freshest, gradually enhanced by empyreumatic nuances and elegant spicy touches, faithful reflections of the terroir. The expression is intense, precise and particularly promising for the future.
Palate
The attack is enveloping and velvety, revealing a fleshy, intensely fruity substance that caresses a tannic structure of rare density and finesse — as silky as a thread of silk. The exemplary maturity of the tannins lends the whole a remarkable suppleness, while the underlying freshness brings tension and brilliance. The long, refined finish bears witness to a great wine combining immediate pleasure with strong ageing potential.
A silky and dense Grand Cru Classé from Pessac-Léognan
The estate
Founded in the 16th century under the name Chivaley, Domaine de Chevalier is a flagship of the Pessac-Léognan appellation, on the outskirts of Bordeaux. Since 1983, Olivier Bernard has been perpetuating a tradition of winemaking excellence. The estate stands out for its unique terroir of gravel, sand and clay, and a single-block vineyard. It produces high-quality red and white wines, all sourced from the same terroir, and is recognised as a Grand Cru Classé de Graves.
The vineyard
Located at the heart of the Pessac-Léognan appellation, the Domaine de Chevalier vineyard extends over 67 hectares, 60 of which are devoted to red grape varieties. The vines flourish on a gravelly soil resting on a clay-gravel subsoil, an ideal terroir for Cabernet Sauvignon, which makes up the majority of the plantings. The most prestigious plots are home to 50-year-old Cabernet vines, bringing concentration and complexity to the wine.
The vintage
The 2025 vintage benefited from exceptional weather conditions: a rainy winter ensuring good water reserves, a mild spring promoting an early and even flowering, followed by a hot, dry summer allowing optimal ripening of the grapes. The harvest, staggered from the end of August to 26 September, was carried out in excellent conditions, with satisfactory yields. The result is wines of great aromatic richness, combining freshness, complexity and elegance, in both white and red.
Winemaking and ageing
Manual harvest in small crates. Meticulous sorting in the vineyard and then in the cellar, with the berries optically sorted after destemming. Plot-by-plot vinification takes place in four types of vats (steel, stainless steel, concrete tulips, wood) for optimal selection. Ageing continues for 16 to 18 months in barrels, of which one third are new oak. Alcohol: 12.5% vol.
Blend
65% Cabernet Sauvignon, 30% Merlot, 5% Petit Verdot.
