The estate
The Domaine du Cellier aux Moines was founded in 1130 by the Cistercian monks of the Abbey of La Ferté. These monks were the first to build the famous Clos de Burgundy. Since 2004, the Pascal family has successfully undertaken to restore the estate and give it back its full vitality, with a conversion to biodynamics now complete.
The vineyard
In Givry, the vineyard of Domaine du Cellier aux Moines covers 5 hectares surrounding the historic Cellier. The Clos du Cellier aux Moines Givry 1er Cru comes from this south-facing vineyard on a gently ventilated hillside. The vines are grown biodynamically on clay-limestone soils.
Winemaking
The Clos du Cellier aux Moines Givry 1er Cru is crafted from old vines, 70% of which are destemmed.

Tasting notes
The Clos du Cellier aux Moines Givry 1er Cru reveals a nose of ripe fruit with aromas of cherry and wild black fruits. These aromas mingle with spice notes and a delicate floral touch. On the palate, a lovely structure of supple tannins takes shape. Soft aromas of candied red fruits and wild raspberry unfold into spicy and peppery notes on the mid-palate, before finishing with a chalky minerality on the finish.
